  • This delicious low calorie tofu recipe is one of my favorite to cook and eat. Very healthy and rich in taste and spices, this recipe will keep you full and wanting more at the same time. To safe time, prepare the sauce while the tofu is being baked in the oven. Peanut butter are optional and Cardamon pods/ jalapeno are optional and depends on if you want the recipe to be spicy.     INGREDIENTS:
    14-16 Ounces Extra firm TOFU
    4 tablespoons Olive Oil
    1 teaspoon Sea salt
    1/4 teaspoon mustard seeds
    1 white Onion
    2 cloves garlic
    1 tablespoon minced ginger
    1 teaspoon Turmeric
    Cardamon pods (toasted)
    1/2 teaspoon chili powder
    1/4 ground black pepper
    1can Tomatoes with juices
    1 tablespoon peanut butter
    1 jalapeno (optional)
    2-3 Cups vegetable stock
    Parsley (optional)
