I love steel cut oats. I accidentally bought some over a year ago, without reading the instructions that tell you that you have to cook them for 30 minutes. I read the directions and figured I'd give them a try. Now I have it nearly every morning. Always easy them with brown sugar and milk. Maybe I'll try the savory technique now. The chewy texture rocks!
This is actually a type of soup we make regularly in my culture (especially during Ramadan). We add things like tomato sauce and black lemon for extra flavor (and some lamb chunks if we’re feeling fancy).

I make it with extra water because I like my oats a bit runnier. When I drink it it gives a small tingle at the back of my throat from the chilli. This is kinda like a comfort food for me ig? Idk it just hits the spot when I want to have a small meal at night
Mmmmmmm 🤤 I could imagine adding lime & cilantro before serving, and garlic and roughly chopped tomatoes to it just before it's done cooking, with a drizzle of whisked eggs, would be amazing too 🥰 Maybe even add some beans. I LOVE beans 😊
That olive vegetable thing is sooooooo delicious. I used to eat it on bread when I lived in China... I still buy it whenever I go to a Asian supermarket.

Oh my gosh I love congee! Whenever I'm sick, I make it with Japanese sticky rice, since I'm Japanese and that's kinda my default :> I normally eat it with umeboshi, katsuobushi and ichimi togarashi

If you haven't tried cream of wheat I definitely would. Ashamed to say the first time I tried it was in rehab but you can have it sweet or savory. I personally put a little butter, sugar, and syrup and it's amazing!
The Norwegian make porridge (grot) from whole grain barley, lot more fiber than white rice, too. Less fat & protein than oats, a bit more carbs but 70% more fiber.

I love savory oats! You might enjoy millet also? Similar chew as oats but less slime. Barley also! Both delightfully nutritious :)

I made this with some fresh sage in the congee. Topped with a couple eggs, green onion, and chili crisp, it's spectacular!!

Chili crisp is special but gochujang or miso can provide a savory umami base for your oats and you can crisp your own garlic as a topping.
