This is a FANTASTIC recipe and so is your jollof seasoning recipe. I like to add a can of crushed pineapple to the rice and usually add in a pound or so of chicken wings with the legs attached whilst cooking the rice and my lord is this a great dish. Graham Kerr has a recipe called pineapple chicken curry and he adds a spice blend that he calls "pop"- perfume of the palate" that he must have learned from traveling to africa because it is VERY similar to jollof seasoning if you mix his curry blend with his pop blend. @AmazinKitchen I just added 1- 567 gram (20 oz) can of crushed pineapple (not the syrup added kind, just the "packed in natural juices" variety) at the end. It adds a mild sweetness and a mild fruitiness. Its.....pleasant. It probably won't come out one, one like your recipe does but it's still very tasty, albeit a bit more wet.
