  • Today I woke up feeling a bit under the weather and decided to make a pot of caldo de pollo or Mexican style chicken soup. This is my go to soup that helps me feel better when I am sick. I am raiding my refrigerator for ingredients and making the best of quarantine cooking. #Stayhome and cook #withme.

    INGREDIENTS
    2 1/2 lbs chicken drumsticks
    3 1/2 to 3 3/4 quarts water
    2 dried bay leaves
    1 small onion
    6 to 7 cloves garlic
    small head of cabbage (chopped)
    2 medium potatoes (chopped in large chunks)
    1 large Mexican squash (chopped in large chunks)
    1 chayote squash
    2 medium carrots
    1 celery stick
    2 green onions
    bunch of fresh cilantro (I used parsley)
    1/3 cup tomato puree (or tomato sauce)
    1 Tbsp chicken bouillon powder
    salt and pepper to taste

    I think the most important thing I learned in this video beside making caldo. Is that even though something isn't good looking on the outside doesn't mean the inside isn't beautiful also. Never judge a squash by its cover

I grew up in a foster home and always got the question “you’re Mexican why don’t you speak Spanish” & it’s always a challenge, looking like something, being something, but not totally there.       Yeah I speak Spanglish sometimes and I think it triggers people. Slowly but surely I will get to conversational Spanish. In the meantime I am still learning. 😊

    The first video I ever saw from you was the Barbacoa in the crock pot! When I saw the package say "HEB" I was like "ohhh yeah! She's a fellow Texan" and have been watching ever since. I'm originally from Brownsville Texas and worked at HEB for 7 years before moving to MD with my husband. All
    Your recipes remind me of my own grandmas. I miss her cooking. She doesn't cook much anymore since she's 95. This Caldo de Pollo looks amazing and can't wait to try it on my own. I'm 38 and YUP! Grandma taught me how to roll up my little corn tortilla, add salt and lime to the soup and dip and eat. Man! That's how we do it! And yup! A little arrozito into the bowl first and then soup on top. I hope you feel better soon. I also like mushy cabbage! But my chayote has to be not too mushy. 😂 Thanks for all your delicious recipes! We made the horchata one last week and it was to die for.

    I have watched this video four times during different months. I finally built up the courage to try and make caldo de pollo. I am Mexican American with parents who grew up in ranchos where if they wanted caldo de pollo they had to go kill a chicken and get all the fresh home grown ingredients etc. I was always so intimidated to even try to make caldo. But your video and your approach to making it gave me the courage to try it. I’m proud to say I made my first caldo de pollo today and it was delicious! Thanks for this video!

    I like to add jalapeños to mine. My wife isn’t a fan of it but I’ll eat it all day. My dad used to make the best. He used to make it with fish too because we lived in Florida and fish was everywhere

    This has to be one of my all time fave cooking demo’s. You took what was in the fridge, made it work. Even showing the realness that food that’s not perfect can & should be used. So many going hungry and I know I’m guilty of waste.
    I love also how you don’t care how everyone else may think of how you like your mushy cabbage. All the things in your demo I do and it made me feel good! Keep on being real. The recipe is great.

    You are real and honest and I like you as a person. Sincerely. I am going to try your recipe. I sneaked in a chayote into soup and mexican squash also and my husband loved it. I didn't tell him what he ate until I showed them to him at my Latino store. He accepted it! Secret, sneak in new things, tell them later. Even Venison. I love mushy cabbage, too. Use it in my vegetable soup. Here is PA yesterday we had horrendous winds which blew all allergens right through my mask so, I, too, have a runny nose and feel bad, too. So, let the chicken soup do the healing!! Feel better soon. I have to go out for more allergy med tomorrow. Love you.

    I cook it the same way and I watched my Mama make it. I also like Caldo de res or Cocido. The rice and tortillas is a necessity. I personally like to put Salsa Picante in mine. Your soup looks delicious. Thank You for sharing.

    Exactly the way my grandmother used to make chicken soup, or caldo de Pollo...
    I'm half Spanish and half white and where food is concerned I had the best of both worlds!!

    I'm dealing with my usual spring allergies right now. And the pollen count isnt helping. Lots of sneezing and itchy nose sensations.
    Soup looks great though, and would help with the ichies. I think you've given me some inspiration to make some soup today for supper tonight.

    Thank you for sharing your recipe. I luv this soup. In my opinion it has a medicinal quality. I went to a Mexican market and deli in East Palo Alto Ca on the day that I felt like I was at the beginning o f a cold. I bought the same chicken soup you made. When I got home I at the soup. drank some oj, took a nap and woke up feeling normal and symptom free.
    So to save having to drive so far to get the Mexican style chicken soup, I decided to try to find the recipe. Yours seem an exact duplicate.

    So happy I’ve found you and your channel! Absolutely love this video. It’s exactly what I was looking for. Although a year later, I also woke up feeling like crap today. But as a mom of three littles who can’t go to a grocery store and has to make do with whatever is found in the cupboards and fridge…Soup it is! But how to make it out of random odds and ends? As I still need to make a good dinner for my family you could have no idea how much I appreciate this absolutely perfect video!     My favorite part of having a gas stove is heating tortillas directly on the burner. I've never done the lime and salt trick with them, though! Definitely gonna try this!

    I made this a couple of times and my wife loves it and me too! Great on a cold day or anytime. I never used squash but will do the next time! So easy to make and just a plain good eats!! Enjoy you vids!!! Gonna try a few of your dishes soon! Thanks

    I watched the Stars Soup video yesterday and my sick wife and baby ate it all up! Love how simple yet flavorful these recipes are. I added a couple of Turkish bay leaves while the broth boiled up without seasoning and the whole kitchen already smelled good. Once I added the other aromatics I couldn't wait to try the final result. 😅 anyway, love your videos, your calm voice and manner make them easy to follow along with while doing prep or cleaning.

    You are a great home cook. I love cleaning out my veggie bin for soup too. The best broth I ever made was a bin clean out soup with turnip, parsnips, onion, carrots, celery, garlic, dill, bay, chicken, pasta, and seasoning. I added some fresh collard greens from my garden at the end. I’m a huge fan of making something out of anything you have. Wouldn’t you agree that cooking is a form of art?

    Thank you for this video, I was at the carniceria 2 days ago and bought a tray with all the veggies and everything in it. This is my first time making caldo de pollo and I feel confident.     Love your "real" approach, we all like different things so add want you have and what you want. I don't use recipes and this is my first time watching a recipe. I add white rice to the caldo or macaroni shells. Yes, there's no one way to do it...just go with it. Blessings.
