When the oil is reused it is flavored by whatever was previously cooked in it which would make some of the unique flavor of restaurant dishes almost impossible to recreate at home. It also appears the use of high heat and speed requires a well organized kitchen.

Well, a good way to explain it is to compare it to smoking your meats in a BBQ. In American BBQ, chefs would smoke their meats for hours with wood chips. This process is very time consuming, but the reward is an amazing rib that falls off the bone and melts in your mouth. Similar to smoking in BBQ, wok hei smokes every ingredient in the dish. This is achieved by combusting oil into smoke which gets transferred into the ingredients whether it be rice, noodles, vege, etc. The oil needs to be heated at very very high temperatures to combust and create 'wok hei'. For context, a wok burner in a professional chinese kitchen is about 4-5x hotter than a professional western kitchen. Creating wok hei threads a very fine line of smoking your dish, and burning it. With such a hot surface, it only takes a few seconds for the food to burn, hence the constant movements. It is a very complex technique. I hope you learned something new :)

I've been trying to wok dishes like this for the last six months and I think my main fault is not enough oil. The timing and order of ingredients are also so precise that I can't seem to quite nail it. I envy your amazing seasoned wok. Thanks for sharing.
even for chinese who are familiar with authentic chinese cooking, its very difficult to replicate chinese restaurant dishes at home. the key difference is because cooking burners in chinese restaurants are vastly different from other kitchens. its like jet engines that produce extreme high heat....

I love watching any Asian people cooking with wok. My local restaurant does it all in front of you and I just love to watch them cooking many meals all at the same time with multiple woks going all at once. One day I would love to visit china or Amy other Asian country and try thier street food and taste the real deal.

I love that initial noodle prep. Great idea. I’m hooked on this style of noodle cooking. And I’m good at it now. The oil bin and colander is my next step up
That is just too cumbersome to keep in a home kitchen. Especially if you don't cook Chinese stir-fry every day. That setup is viable only for restaurants/eateries that have huge daily output. Oil will get rancid in a few days and you basically need same amount for one portion as well as forty.

I wish I had a stove top that gets that hot. When I cook veggies I often have to do it in batches so the pan doesn't crowd and they just end up boiling in the water released. If I had a hot oil set up like that plus being able to drain the oil off like that I feel my cooking would improve so much.
Looks like a typical chow mein dish so the recipe should be pretty easy to find. And the guy in the vid didn't use that many ingredients so you should be able to recreate it :)

飲食のチェーン店でバイトしてたけど、
正直に言って目も当てられないほど汚かった。
主さんの真面目さが伝わってきます🥰
以前やっすいラーメン屋でバイトしてたけど厨房は綺麗だったよ
今はないけど数年前までやってて一番安いラーメンが税別200円だった
とはいえ汚い店は汚いらしいから仕方無いとは思う
その店は味はコンビニで食べるよりは遥かにマシ程度だったけど今の利益出せる繁盛店よりは余程回転率は良かった
ランチも1kgくらいならペロリと食べられる自分でも500円で満足できる位(ラーメン、炒め物、ご飯のセット)だった
今思うと良心的な店だったんだなって…

What amazes me so much is that he reuses the oils and is still clean! Plus the frying of vegetables adds natural seasoning and flavoring to it!
We should never re use oil to many times it will lead to triglycerides in cholesterol.
