Ingredients required to make the chicken, spinach and poached egg hot soba noodles (1 person):
Chicken thigh x 1
egg x 1
spinach x 40g
spring onion x 1
soba x 90g
yuzu seasoning x 1 tsp
potato flour x 1 Tbsp
***if you would like to add some heat / spice to your hot soba noodle soup, you can add some shichimi togarashi (add to suit to your desired taste)***
for the soup -
water x 650ml
dark soya sauce x 50ml
cooking sake x 15ml
mirin x 15ml
sugar x 3 tsp
katsuo bushi bonito flakes x 10g

Other toppings that can be added to your soba noodles:
- stir fried vegetables such as bean spouts, carrots, cabbage, onion and shiitake mushrooms.
- you can add vegetables directly to the soup and cook for a few minutes on a low heat i.e. bean sprouts, asparagus, broccoli, shiitake mushroom, mange tout.
- scrambled eggs
- any meats i.e. beef, chicken, pork, duck breast
- seafood i.e prawns, lobster, scallops, squid etc

I was craving Soba for weeks... Made the hot version two days ago. Absolutely delicious and so easy!
I didn't have cooking Sake for some reason. So I used Mirin instead and left out the sugar.

I haven't had 100% soba noodles yet, but I love the ones I can buy at my sushi restaurant (soba and wheat combination).
Tomorrow I'll be getting the all soba ones. I like your sauce, but I'd skip the sugar . Green tea makes the meal complete. One thing you can use on noodles (and just about anything else) is "hot sesame oil". The sesame oil tastes delicious and the hot (spicy) kind adds a bit of a punch to food. I used to put it on my "tonkatsu" in the restaurant in New York (unfortunately, they've closed it). It made it taste fantastic. I really enjoyed your presentation in the video. Thank you.

Baked whole fish, interesting. I’ll make a video on that. Thanks for the suggestion.
For a fish fillet I like to broil both sides. Timing depending on size of the fish and you may wish to add oil or butter with seasoning. Absolutlely easy but do crosss reference receipes online for recommended timing and you can check it to prevent over cooking. Foil may or may not be recommended.
Using hondashi the flavor gets similar to the one using katsuo?
When you use bonito flakes for dashi in 1.5 l of water how much bonito flakes do you put and after use do you discard or you use for something else? 😊
I always buy those exact soba noodles! They're my favourite kind of noodle and they're fantastic in quick stir-fries.

I love throwing together quick noodle soups, and buckwheat soba noodles with broth, veggies and a soft poached egg has been an improved quick dish in my diet for a long time. Looking forward to trying this recipe.
