- Ingredients:
*1 cup quinoa (cooked)
*2 celery (chopped)
*1 red pepper (chopped)
*1yellow pepper (chopped)
*1 cup cucumber (half moons)
*2 tomatoes
*1 cup chickpeas (boiled)
*1/2 -1 teaspoon Himalayan salt
*1 teaspoon turmeric
*a pinch of black pepper powder
*2 tablespoons chia seeds
*1 tablespoon extra virgin olive oil
*3 garlic cloves (squeeze with garlic squeezer) {optional}
*1 tablespoon or more of hemp seeds (optional)

Combine chickpeas (best if soaked overnight) and water in a pot, bring to boil, cover and reduce the heat, then simmer for 10-15 min.
Rinse quinoa for a few minutes before cooking it (especially if you are sensitive to the bitter taste of saponin). Combine the quinoa and water in a pot, bring to boil, cover and reduce the heat, then simmer for 10-15 min.
Chop all the vegetables.
Mix all the ingredients.
You can sprinkle a tablespoon of hemp seeds on top (optional).
