If there was no hesitation, he would have just picked up the knife and stabbed the guy, no thinking required. The actual act of picking up the knife and then thinking first, is hesitation. Ultimately, it doesn't matter cause he did choose to try and stab the guy anyway but he did hesitate first. It's just that he didn't hesitate out of fear.
