  • 完成的Pavlova蛋糕非常誘人!蛋白霜散發著甜蜜香氣,外殼一圈是脆脆的蛋白餅口感,中間則像棉花糖一樣軟綿綿的。蓋上滑順濃厚的鮮奶油乳酪餡,看似相像的兩種奶霜其實吃起來截然不同,每一口都能吃到這道甜點不同層次的風味!

    食材▼
    ○蛋白霜
    蛋白 85 g
    細砂糖 110 g
    玉米粉 1 小匙
    白醋 1 小匙
    香草精 1/2 小匙
    ○奶油餡與水果裝飾
    馬斯卡邦或奶油乳酪 50 g
    鮮奶油 200 g
    藍莓 適量
    哈密瓜 適量

    Pavlova Cake is consisted of a big meringue cookie, cream filling and seasonal fruits. It’s a perfect gluten-free desert, you don’t need flour or any other substitution product. Sweet meringue cookie is perfectly pairing with unsweetened cream and tart fruit. You will fall in love with this delicate dessert after your first bite!
    :Recipe:
    Ingredients▼
    ○Meringue
    egg white, 85 g
    sugar, 110 g
    cornstarch, 1 tsp
    white vinegar, 1 tsp
    vanilla extract, 1/2 tsp
    ○Topping and Filling
    mascarpone or cream cheese, 50 g
    heavy cream, 200 g
    blueberry, 1/2 cup
    diced honeydew, 1/2 cup
    :Instruction:
    ●Making the Meringue
    1. In a mixing bowl, pour into the room temp. egg white.
    2. Beat with an electric mixer until foaming.
    3. Add 1/3 sugar at first. Continue to beat on medium speed.
    4. Add remaining sugar gradually while beating on medium speed.
    5. Beat until sugar has dissolved. Test by rubbing some between finger and thumb.
    6. Mix white vinegar and cornstarch.
    7. Add the mixture into the mixing bowl.
    8. Add vanilla extract.
    9. Continue to beat on high speed until it formed stiff peak.
    10. Line a baking paper on the baking sheet.
    ●Preheating the Oven at 350℉/ 180℃
    11. Spoon the meringue onto the baking paper.
    12. Shape it into a cake shape with a spatula.
    13. Create some pretty pattern on the side with a spoon.
    14. Flatten the top of the meringue.
    15. Transfer into the preheated oven.
    16. Bake at 250℉/ 120℃ for 70 min.
    17. When time's up, let it cool down in the oven for 1 hour.
    ●Making the Cream Filling
    18. In a mixing bowl, add softened mascarpone.
    19. Pour into chilled heavy cream.
    20. Beat until becoming smooth and shiny.
    ◆ 1 hour later ◆
    21. Put the cream filling on the top.
    22. Put the fruits and slightly press into the cream.
    23. Dust the top with powdered sugar.
    24. Enjoy!
