I did this project! Literally exact step by exact step when I was in my elementary school's gifted program! Heat lamp, dimmer switch, even the aluminum tape and old computer fan!!! Hahahahaha wow what a flashback!

Just a thought. Checking the power consumption on the Heat lamp and power supply so you could use the smallest inverter possible and add in a 12v battery as well as a solar pannel so that you could have a complete off-grid solution that doesn't require constant sun to work.

It seems you'd be better off buying an actual dehydrator that stores more food and can maintain the desired temperature inside so you don't constantly run a heater. There's also less risk from the sketchy wiring and heat lamp in a cardboard box.

Hot Tip : You can buy 12v ceramic hair straightener heaters on ebay for a couple of bucks, you can then run it all on the same power supply (one with more than 0.75a than in the video though. the 2.1a one i use works fine). Its what i do for my biltong (jerky) boxes. I put them in a little terracotta plate from a broken planter to keep it off the cardboard, even though i don't have them hot enough to burn the cardboard/foil.
Hey KOR cutting holes on the top is incorrect. Reason: Cold air is denser than hot air or the air containing moisture is actually cool air and thus would settle at the bottom, while the hot air would rise up so instead of ventilating you are actually making the process of heating or dehydrating slower.
Heat is not important to the drying process, air flow is. That is what the heat source is for, to create a thermal current, to move the air. Every dehydrator/smoker has vents at the top.
A guy I know made a dehydrator in a rolling cabinet with a squirrel cage fan in the bottom and he used it to dry out veggies to make soup fixings for winter.
Not to sound like I'm doing, but have you invested in Heat Shrink, It'll work better than just taping it up (I've used I on projects with my father doing wiring and he told me that Heat shrink (in his opinion) works better than electrical tape), it'll bond and hold the wires together and completely wrap around the Wire

Correct, a heat source isn't even required. You can dehydrate food on a box fan with some paper filters at room temperature.
Where do you purchase paper air filters? Even on Amazon I can only find fiberglass!

It would be better to secure them along the sides rather than across as it's allow for easier removal and placement of the racks
