Thank you for using the Eye. I smoked one years ago on the old Brinkman water smoker. And even though I injected the Eye with French onion soup juice, I screwed up and didn't pull it until it was around 135 degrees. Even rested, it still came out too tough, but the flavor was fantastic. We made a couple of well-dressed sandwiches and the rest for chili and tasted great. In other words, next time I do it, I will pull it at 120 ! And the potatoes look excellent!

Hi Brad. You may have overcooked it. This was so good. The sandwiches the next day flat out rocked!

That looks good. I have never seen anyone do a sirloin tip roast low and slow. Could you possibly do one, preferably on the Masterbuilt?

There are plenty of people who have never cooked professionally but are very good at what they do. From that group there are very few who know how and why things worked out the way they did.

Excellent work. You need a meat slicer. Thinly shaven roast beef with provolone cheese. You already have the dipping sauce.
BTW, received my care package of 2 jars of Uncle Steve's sauce. The Screaming Sasquatch should be interesting. He can thank you for the business.
    All the best.
