Be sure that while you smoke it low and slow always hit that temp mark😋. You should pull this off the grill when it hits an internal temp of 130 degrees. Then wrap it for 30 minutes and enjoy 😋😋😋😋😀!! Thanks for viewing and don’t forget to subscribe to my channel.

You have to slice eye of round thin, otherwise it will be chewy and tough, sliced thin, and smoked, it’s heaven. I marinate mine in a vacuum marinater with beef broth, Lea & Perrins, a splash of Frank’s hot sauce, onion and garlic powder, and some slice onion and garlic as well, overnight. Then bring it up to room temperature, pour some melted beef tallow over it, and apply your rub, then smoke to your desired temp, and when it’s done resting, slice very thin! Fresh kaiser rolls, and sone horseradish sauce, it just doesn’t get any better than that! 😊
I usually put them in a 500° oven for 45 minutes. Never had a bad one. I bought a pellet grill last night and when I get it put together this will be the first thing I cook.

Looks good but tough as nails , I usually make that with butter in center
Also slicing it thinner is a good idea
Nice job.. please pat the meat down rather than rub... if you rub it may not be consistent.
