I worked at in n out for 5 years. They make the grilled cheese by sticking the cheese directly on the grill and when in melts about 15-30 sec in they put the bun directly on the cheese slice and slide it off without a spatula. They also don’t add butter or oil to anything, including the grilled onion. The cheese on fries is melted by sticking the fries with cheese on top in a steamer. You missed out on trying their chili peppers!! They will make anything you want in whatever order as long as it doesn’t exceed 4 meats and 4 cheeses and meat doesn’t go on the fries. Also the order of ingredients are always bottom bun, sauce, tomato, lettuce, meat, cheese, onion, top bun unless you add or take an ingredient off when ordering it may be on top of the onion.
Hey Sam! Former In-N-Out employee here, my manager told us the main reason we wont do burgers larger than 4x4 is because anything bigger than that doesnt fit in the packaging when you factor in onions lettuce and tomato. Which is a big deal for In-N-Out since so much effort goes into presentation. That said, we're happy to allow you to purchase the components separately and allow you to make them yourself as you did. 😎 A couple items that was sort of here but are a game changer in my opinion is chopped peppercinis and the "whole grilled onion" on the burger. Been down in CA for almost 5 years now, and in n out is my go to. You guys must try the double double protein style with EXTRA grilled onions and EXTRA chilies. The absolute BOMB!
I saw a smash burger tip where they didn't use parchment because they let the meat-balls cook for about 20-30 seconds & then turned them over before smashing them (cooked dot up). The partially cooked round spot on the burger kept the press from sticking!

I grew up on In-N-Out, people on the internet like to complain their burgers arent fancy enough, but considering how little the price and quality of a cheeseburger has changed (still $3.75, Los Angeles prices) Id say its neither underrated nor overrated, but simply "rated."
I’ve had this argument before with people. In N Out may not be the best hamburger/cheeseburger ever, but it is clearly the best sub-$5 double cheeseburger / $3.75 cheeseburger, $2 hamburger, by a mile. I’ve had better burgers than In N Out and most of them have been $14+ at a restaurant and it’s just a different ball game.
Honestly, the habit burger is like a bigger version of in n out burger. I'm just talking about the burger. But still kinda expensive compared to in n out.
Different places have their "secret menus", when traveling through West Virginia they have a thing called the "slaw dog"! Hot dog bun, hot dog, chili con carne (no beans) topped with cole slaw, mustard and jalapenos as an option. It looked horrible, messy to eat...but actually wasn't too bad. As my dad always said, don't eat with your eyes, they try to betray your mouth!
One thing I just started doing: get your burger animal style (caramelized onions), plus add fresh onions as well. I always thought just animal style was top-notch but adding fresh onions makes it even better.

My In-N-Out order is a double single, no onion, mustard fried (which includes pickles), extra toasted, extra spread. Messy but so good! As a native Southern Californian living in Tennessee I am so happy that In-N-Out is finally heading our way!

They specifically don't add a lid on their to go boxes just so when you get it home your fries taste EXTRA cardboardy. They're really proud that their french fries taste like card board.
The In n Out COOKTOP seasoned with the flavor of 500,000 burger patties is the secret. The carmelized onions taste like "the grill " that you won't get at home or anywhere else....unless you've cooked 500,000 burger patties on yours at home.

Try doing “fries well” next. That just means the fries are fried twice and come out extra crispy. I personally prefer a 3x3 animal style protein style with grilled onions and, if it’s available, chopped chilies. Animal style fries well and an Arnold Palmer drink. I used to get the 6x6 all the time, god I miss that burger. It used to come like a normal double double (lettuce, tomato, raw onion) You had the option for animal style etc.

I love this episode. I grew up in the country in PA. No fast food. Zero. My college roommates took me to McDonald's my freshman year in DC. I thought I could order Cole slaw with my hamburger and French fries. I'm sure my roommates thought that it was a sociology moment. 😅
It's a shame that they don't do a lot of secret items anymore. I used to work at In-N-Out back in the late 90's & I actually saw a 50x50 served once for a baseball team who ordered it (why did they not order 25 Double-Doubles is a question I asked at the time, but whatever....) They also used to give you something called Cheez-its which is basically the scrapings of the burnt cheese from the grill onto your burger, but lately I've asked for it and they haven't given it to me. But in a nutshell, the secret menu is basically anything that you can think about that can be made with their ingredients.

Idk how long away that’ll be but eventually I’ll finally get to try it. They recently brought Wataburger here and I got to try it. It was pretty good. Definitely had better but it was good.
Only been to In N Out once, when I spent a week in LA. I went to one that had a drive thru on one side, walkup on the other side. Building was only like 5' wide by like 20' long. Then they had a few picnic tables for the walkup crowd. Their fries are plain but you can see they cut them fresh and see them slicing fresh tomatoes, onions and put freshly peeled leaves of lettuce. Take not frozen ground beef and make the patties with a patty press, all to order, no heat lamps. I also saw them changing out the fry oil between batches. I am sure they don't change every batch but far more often than most restaurants. Oil gets rancid after being used too many times but very few restaurants change it after it goes rancid. It is recommended to change the oil after like 8 batches of fries or 4 batches with battered foods.
Did you hear about the latest secret menu hacks? The In & Out Big Mac (you have to build yourself)and adding an animal style Flying Dutchman on top of animal style fries. It’s all yummy
The In_N_Out secret to my mind is the tangy sauce with cold tomato and lettuce topped with a hot grilled cheese….oh, yeah, and some thin meat patties. Seriously, either their slices of cheese are thicker, or they double them up. So a double double seems like a 2 patty 4 cheese proposition. But it’s not just that. The hamburgers (no cheese) taste good too, so grilling the bun next to all the meat and onions must get into it, like an In-N-Out wok hei of sorts.
And a beautiful grilled cheese. Some spots will invert the buns and have the flats on the outside. Man, I'm missing In n Out. - former california native.
We don’t have In-and-Out anywhere here in NJ that I know of, I live in the backwoods, but I can’t wait to try a couple of these. They look messy. I want to try the fries Animal or Roadkill style. That sounds so good. I already eat burgers without bun or lettuce so that is easy enough for me to do. I will add the onions and sauce. Thanks for making all these. Can’t wait to try them.
In-N-Out's "secret" menu is probably one of the worst-kept secrets in the fast food industry. :) I haven't made it through the whole thing, but I do have animal-style Double-Doubles pretty regularly.
If you get out to South Korea again, Lott Tower has a Bruxie (chicken and waffles) branch that outdoes any of the ones here. Their "Holy Chicken" and dessert waffles in SK are life-changing. My wife and I had it while in SK and we openly discussed buying a franchise based on the taste alone. At one of the In and Out grand openings I talked to the guy that was working the drive-thru window and the line got so long that the wait time was close to 12 hours and In and Out hired a gas truck full of gas to fill tanks in line as a courtesy.

The In_N_Out secret to my mind is the tangy sauce with cold tomato and lettuce topped with a hot grilled cheese….oh, yeah, and some thin meat patties. Seriously, either their slices of cheese are thicker, or they double them up. So a double double seems like a 2 patty 4 cheese proposition. But it’s not just that. The hamburgers (no cheese) taste good too, so grilling the bun next to all the meat and onions must get into it, like an In-N-Out wok hei of sorts.
I'll take Shake Shack over In-N-Out every time! Maybe you can do a Shake Shack knockoff???

We don’t have In-and-Out anywhere here in NJ that I know of, I live in the backwoods, but I can’t wait to try a couple of these. They look messy. I want to try the fries Animal or Roadkill style. That sounds so good. I already eat burgers without bun or lettuce so that is easy enough for me to do. I will add the onions and sauce. Thanks for making all these. Can’t wait to try them.

In-N-Out's "secret" menu is probably one of the worst-kept secrets in the fast food industry. :) I haven't made it through the whole thing, but I do have animal-style Double-Doubles pretty regularly.

If you get out to South Korea again, Lott Tower has a Bruxie (chicken and waffles) branch that outdoes any of the ones here. Their "Holy Chicken" and dessert waffles in SK are life-changing. My wife and I had it while in SK and we openly discussed buying a franchise based on the taste alone.
At one of the In and Out grand openings I talked to the guy that was working the drive-thru window and the line got so long that the wait time was close to 12 hours and In and Out hired a gas truck full of gas to fill tanks in line as a courtesy.
