Instant Pot Mexican Rice

    Instant Pot Mexican Rice
    2 cups long grain rice, well rinsed and drained (I used basmati)
    1 1/2 cups veggie broth
    1 can diced fire roasted tomatoes (you can also use chili style diced tomatoes)
    1 medium onion, diced
    2 large cloves of garlic, minced
    1 tbsp chili powder
    1 tbsp smoked paprika
    1 tsp cumin
    1 to 2 tbsp oil
    salt & pepper to taste
    Press the saute button on the IP and saute the onion in the oil for a few minutes. Be careful that id doesn't burn to the bottom, add a bit of water if needed.
    Turn of the saute feature and add the spices. Stir to toast them a bit.
    Add the broth, garlic and rice. Stir well.
    Add the can of diced tomatoes to the top of the rice. DO NOT MIX IN. It's important to let them sit on top of the rice to prevent getting a 'burn' message.
    Seal, set the IP to Manual - High pressure - for 4 minutes. After 4 minutes, press cancel and let the IP naturally release for 5 minutes. After that point you can manually release the remaining pressure/steam.
    Fluff and enjoy.
    Note: you can adjust the seasonings to your taste adding more or less or even different ones as desired. Also, for a dryer rice, you can reduce the broth to 2 cups.

    You can make the very same on a stovetop as well. Same steps but toast your rice slightly, add everything else, cover and simmer. Sophie makes her way into each video AND I LOVE IT! She’s such a sweetie pie 💕

    I make this all the time with different spices ie: green peppers and bay leaf and I call it tomatoe rice - my grandmother taught me to do it - very yummy xx

    Another yummy 😋 recipe, thanks 👍. I make Mexican lentils & quinoa with various vegetables (depends what I have in when making this) in the slow cooker and that's a tasty dish. I also hate peeling garlic and so sometimes I buy the jars of cloves or jars of chopped garlic

    Hint: :I use a microplane to prepare the garlic. After peeling, etc, just run the garlic cloves over the m/plane and presto -- "minced" garlic!!!
    QUES, if I may: why didn't you add the garlic to the onion and let it cook a bit at that time? I usually do that. Also, have you tried the Better than Bouillon product line? IMO they're a great way and enhance taste (they come in a variety of flavors, incl chicken).

      It's the peeling of the garlic that I hate. I don't add the garlic in with the onions because the sauté feature is quite hot and I don't want to take the chance it will burn.

    Yum..Fast n Easy...My daughter keeps getting an error message on her instant pot with everything. Lol, I went over and used hers, no error...Lol 🤦‍♀😆😆😆

      Yet another reason of many not to eat animals! If you watch some documentaries, you will see ethical, environmental and health reasons to do the same! It would make not being able to afford it not matter if you don't even view it as food. In today's day and age, it is more than unnecessary.
      Also, plenty of amazing and budget friendly channels for inspiration if you get caught in a rut on a vegan diet. Good luck!

    saw this on America's test kitchen where they put garlic cloves in a mason jar and shook it and the clothes come out clean. try it the next time you use garlic see how it works.
