How to Make Mexican Rice in Instant Pot

  • Hello Everyone,
    Thank you for watching my video on my easy and delicious recipe for Instant Pot Mexican Rice. I hope you are all having a wonderful and blessed day. Enjoy this and don’t forget to like and Subscribe and share with everyone you know. God Bless
    Ingredients
    - 2 cups long grain rice or Jasmine rice
    - small can pf tomato sauce
    - 6 dry measuring cups of water
    - 3 tbsp. of knorr powder chicken bouillon
    - dehydrated or fresh onion
    - dash of cumin
    Instructions
    1. Set pot on saute and pour canola or vegetable oil enough to just cover bottom of pot evenly. Add 2 cups of long grain rice fry until no longer translucent and toasted and golden. ( Jasmine rice is a good substitute)
    2. Add a small can of tomato sauce, 6 cups of water if using the dry measuring cup used to measure rice.
    3. Add 3 tbsp. of knorr powder chicken bouillon, dehydrated or fresh onion, & a dash of cumin.stir well making sure ingredients are well combined.
    4. Set instant pot pressure cook setting 5 minutes. After 5 minutes quick release but leave pot covered for 5 minutes or more until there isn't any liquid. Once rice is cooked remove to another bowl or casserole dish to prevent scorching as twice will continue to cook.

    I have my own recipe similar to this but never made it in an instant pot. If you like your rice a little more on the dry side, not dirt dry just dryer lol. I did a 1:2 ratio, 1 cup rice to 2 cups water. I cooked it on high pressure for 6 minutes, another 6 minutes on low heat or natural release whatever you call it. It came out perfect 👌🏽

    I stopped over from CVC. I make a very similar rice in my Express Cooker and I love seeing someone show how easy you can convert a recipe. I love your Mexican dishes... I grew up in TX and I make my own "refried" beans in the EC. Beans have been reborn for me because of the pressure cooker.

    I can’t make rice to save my life and it drives me crazy! I have tried so many recipes and methods and still can’t get it right. Some of the rice (in the same batch) is mushy and some is crunchy. I live at 5000 feet above sea level and I don’t know if that the a factor. I’ll give yours a try. Thank you for this video.❤

    Hello Ms. Deb, I have been searching for an Instant Pot Mexican Rice recipe, and I found your channel yesterday. I had most ingredients on hand, but only had long grain rice, so that is what I used. I made this rice today (04/19/22), and it came out perfect. I followed your instructions and used the liquid measuring cup, so used 5 cups of salt-free chicken broth and 1 tsp Better Than Bouillon because I did not have Knorrs. Thank you for the recipe and tutorial.

    LOVE watching your videos! Hubs JUST got me a rice cooker. But now I NEED an Insta-Pot!! I told him, I have an air fryer, now a rice cooker...so next on the list is an Insta-pot! But I’ll tell you what...I followed your ingredients and with a tweak from my bff that is from the interior of Mexico...and mannnn....EVEN MY KIDS ATE IT!!! And they do not eat rice! Lol...she makes hers ALMOST exactly like yours...just a couple extra ingredients

    I like this no fuss, quick recipe. However it was a little to moist for me I like my rice on dryer side. I will adjust using a little less liquid. Great recipe.

    Hi Deb and thanks so much for this super easy recipe! I'd have to go back and watch it again to be sure, but I thought you said you were putting cilantro in it at the beginning and then I didn't see you put cilantro so maybe you were talking about cumin?

      Its okay and I use 3 cups of water for 1 cup of rice. I just use the same dry measuring cup that I use for the rice for the water.

    I've been searching for a good rice recipe, I've never seen the 1:3 ratio, can't wait to try this! I have to make a huge pan/batch for a party, how much do you think I can make at one in the instant pot?

      I've not tried more than 2 C in instant pot, to tell the truth I'm afraid to pressure would make it mushy , I'll have to experiment.

    Deb, I have a question do you use the same pot for everything in your instant pot. or do you have other pots for each dish you make. I only have one pot insert, and i' only use it for ribs.I was always told to use different insert for different foods. because the smell will come out in other foods. now remember I'm still learn. I made be old but i want to learn. So thank you for teaching and helping me.

      I use the same pot for everything. I think what might make it smell is the rubber seal so if you change that out every once in a while you should be fine. I also spray the seal and clean it whenever I'm done making something that has a strong smell and let it air out.

    Hi Deb, I LOVE mexican rice and when i cook it on the stove i burn it every time. So i got an IP and my first time cooking it. I did different on the water, and since my kids love it i made 2 cups rice but used 2.5 cups water. It came out so sticky and dry but the rice was moise and cooked. So should i use more water? Definitely note 1-3 i think it would be way to much. I also used my IP Rice button and instant release once it was done. Any advise?

      I don't use rice button, I use the pressure cook button, you could try 2 to 1 ratio and see how that works

      I would think that should be fine. You can use a little less and then taste it to see if you need to add more

    Thank you for sharing this!! I just made it following the directions but it’s still coming out really watery.. it’s been on the low pressure for 20 min and still watery.. is that normal or did I mess it up 😅

      You might be cooking it too low .
      You need to put it at a med low simmer that still has some bubbles, it has to be a notch higher than gently bubbling. Try making it again but try urning up the heat a little higher than what you have been using . Sometimes it's trial-and-error before you get it right, don't give up you will get it if you keep trying ...and like I said use a liquid measure for 5 cups of water &2 cups of rice.In my video I use the same dry cup measure for rice to measure out water, but I should just specify that those 6 cups of water I'm using in the dry measure cup is equal to 5 liquid measure cup, hope that makes sense. If not stay tuned I'm going to remake.

      Hurry I thought you were referring to the rice I made the stove but if you make instant pot rice leave it for 6-7 minutes then quick release but leave covered about6-10 min. It could also depend on your instant pot so if it comes watery try cooking it for 7 minutes and then quick release but leave it covered for about 8 minutes or so 8 minutes or so before you open it you have to also keep experimenting!don't give up

      I have the same issue. 6 cups of water, dry or wet it’s the same measurement. That is just confusing.

      I think she said 2 cups of rice to 6 cups of water. I think that's too much water! I do 2 c rice e for 3 c of water.

    Knor products contain lots of Monosodium Glutamate (MSG) and many people are allergic to MSG. Use home made Chicken stock and spices.

      That is certainly an option for those with concerns, I often use my homemade chicken broth when I have it on hand.

    Can I use the chicken buillion cubes and if so, how many and would it change the flavor too much? Thanks

      I'm sure you can use the boullion cubes I would probably use 3 since I used three tablespoons of the knorr powder. My only concern is that I don't know how it will dilute in the instant pot without stirring it. So what I would advise is to heat one cup of your liquid in the microwave dissolving the bouillon first ,before adding it into the instant pot. I have found even with a powder that if I don't stir it it will concentrate in one spot and make my rice salty. Let me know how that works for you.

      I disolved 3 cubes in water first to make chicken broth and stirred in all my liquids and seasonings before pressure cooking. I cooked on the rice setting for 10 minutes and slow released for 13 minutes. It's really good.

    Hello QUESTION? I need to make 12 cups of finished mexican rice. Can I cook six cups of rice with 18 cups of water in an instant pot? or will in need to do this in batches?

      I have never done it like that amount especially in the instant pot which can be fickle I would suggest you be safe and make it in batches especially when there's such a quantity that you do not want to potentially ruin.

      I think if the rice is browned first then into the rice cooker it would work. I may give it a try too.

    I dont think its germs on the rice, its arsenic. You should rinse it 3x.

      You could put a little less water if you'd like. Once it sits, some of the moisture goes away.

    Wash your rice. Arsenic, pesticides, herbicides, chemical fertilizer, etc.

      You must have had flame to low? Most have reported success, but even I had instances in the beginning, when it came out soggy because I failed to let it reach a rolling boil before I turned it down, to allow boil before setting 20 minute timer. Then remove from heat covered about 10 minutes then uncovering. The liquid absorbs as it sits. Do not uncover or stir while boiling. Make sure it is above a simmer, and you see gentle bubbling action while it is cooking. Practice makes perfect. I assure you most people report success making it.
