Hi Erwan, just to share, my mom once experimented on using white wine vinegar for the paksiw. Turned out surprisingly well. It has been the most flavourful paksiw I've tasted up to date.

We always put ampalaya in our paksiw na bangus. You are right removing the scales of the bangus is good, its been a practice not to remove kaliskis when cooking paksiw.

I love milkfish. I never thought about putting bay leaves and peppers in the paksiw na bangus. I will try your recipe since the ingredients are easy to find here where I am. Bitter gourd is off the table. I will stick with my eggplant and pechay or bokchoy. Thanks for sharing your ideas.

I used to hate Paksiw until I learned simple tweaks on how some people prepare and eat it. Putting a little vegetable oil while the Paksiw is boiling levels up the umami flavor. To neutralize the sourness when eating, which also levels up (several levels) of deliciousness, use a dipping sauce made up of Bagoong Isda with smashed Banana Chili (used in cooking). This way I am likely to eat Paksiw with a mountain of rice or until my stomach aches. I am getting hungry now. LOL
I have been scaling bangus wrong and making a mess for years and all i needed apparently was a plastic bag 🥴

I personally add the bangus liver. I didn't like it at first but i find myself looking for it everytime i eat it!!

Another tip: put the fish inside the plastic when removing the scales👍👍 I remove the scales too so I can eat the skin.
