- Nimbu ka achar or lemon pickle is a great healthy accompaniment to any meal. Ingredients of the pickle ensure your digestive system works well! It has antioxidants, builds immunity, and has healthy minerals good for the body!

Ingredients for pickle:
lemons 400 gm
White salt 2 1/2 tsp
Pink salt (kala namak) 1 1/2 tsp
Ajwain/carom seeds 1 tbsp
Sugar 1 tsp or as per taste

Is it okay to use Himalayan salt instaed of white salt?
My maternal Grandmother and my Mom made this pickle using the same method but they added haldi and red chilli powder.

This is my MIL's recipe, I have never tried with just Himalayan salt. However, I don't see any reason why that should not work.

Thanks for your appreciation! Yes, you could add chili powder and hing, or any other spice of your liking. If making spicy achar, spices are generally added after a few days of making achar, when lemons have softened a bit. Add spices after a week, and toss well.

Nitu, mere ghar mei bahut tarah ke achar bante hain, kuchh seasonal bante hain jo jaldi khatam karne hote hain. Jo achar lambe samay tak chalte hain, unka khane ka number peeche ho jata hai. Waise consumption bhi kum hee hai, sirf dou log hee hain achar khaane wale.

Is there any substitute for sugar? Am on no sugar diet..
Rachana, there's no substitute for sugar, just that you could use raw sugar instead of white one. Maybe jaggery, I haven't tried that though.Sugar in this recipe balances the flavors.
This quantity of achar is at least 48 servings, 1 tsp of sugar in 48 servings

Aap mirchi powder dalna chahte hain tou daal sakte hain. Achar daalne ke 6-7 din baad jab nimbu thoda soft ho jaye tab mirchi dalen.
