A mayo cake is just a variation on an oil cake. I've never understood why people get so freaked out by the idea.

Vanilla and cardamom is a wonderful flavor combination. It might be good in your cornmeal cake.
I used to always put leavener in right after eggs so I 1) wouldn't forget to add them and 2) wouldn't have to dirty another bowl and I feel so validated by this video

I've made the cornmeal cake probably 20 times in the past two months for us and friends. After the first two, I've added shredded coconut and coconut extract every time. So. Good.

My mom would make mayo chocolate cake for me back in the 80s. I’ve subbed in a pinch without my kids knowing but have since shared the secret since they love to cook and bake.
I really like watching her videos.
Since NYT fired Alison, Melissa has become my favorite NYT foodie.

I bet the cornmeal cake would be good with some instant espresso tucked in there and maybe a dash of orange blossom and cinnamon (I love the coffee orange blossom cinnamon combo!!) Breakfast in a cake haha!!

Me too! And I just mix everything in the pan I’m going to bake in, and deal with the soaking and scrubbing later. Guess there’s different levels of one bowllery

I make my banana muffins with a crunch top, I use cinnamon, brown sugar, butter and nuts, I whizz it slightly to break up the nuts

So the first part of this cake I’m using 1/4th cup of coco powder, 5oz of dark chocolate bar , 1/2 cup brew coffee, 1/2 cup of Mayo does that seem right?

Chines 5 spice is "my" secret ingredient. Whenever a recipe calls for cinnamon I replace some or all of it with 5 spice powder.

Made the choco mayo cake and the center sank :( I’d use less baking soda next time (recipe asked for 1.5 tsp but I think I’d try 0.5 tsp).

Mayonnaise cakes are delicious. When I was growing up, the mother of one of my friends made them. I always wanted to duplicate her recipe.
I've subscribed to NYT Cooking for years and Melissa Clark can do no wrong. No disrespect to all their other contributors but if they all resigned tomorrow as long as MC was still there I'd be OK with it.
