  • This recipe is an easier way to enjoy this wildly popular Thai street food: Kao Mun Gai or Hainanese chicken rice! The traditional way to make Hainanese chicken rice recipe is a bit of a project, but for this version, I use chicken pieces instead of whole chicken, so cooking time is greatly reduced. Then I also cook the chicken and the rice together in the same pot so it's even faster! If you have some chicken stock on hand, it can really be a quick and easy dinner on a weeknight!

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RUclips channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RUclips videos, her cookbook, and cooking classes.       The only fermented soy I could find was natto. Will that work or is that too fermented?

      Hi. I'm Hainanese too - both my parents are Hainanese!
      You cooked the rice just the same way my mum cooked it - saute garlic, ginger and rice in chicken fats. Then add salt and broth to cook the rice!

    Kao mun gai is my favourite dish when I go to Thailand. In my favourite restaurant they serve it with fried chicken as well and it provides a whole different texture! SO GOOD 🤤.

    There’s also Hainanese Chicken Rice in Singapore & Malaysia but we use different sauces on the chicken rice. Instead of a bean paste sauce, we eat it with a garlicky chilli sauce with some dark soy sauce. I’m Teochew and afaik many Thai Chinese (more than half of the Thai Chinese population) are also Teochew, Hainanese is not a very common dialect here in Singapore either but their cuisine has had a great influence on our culture all the same :)

    Haha I'm Korean and I was quite surprised when you were putting 된장 which is exactly the same one with one in my refrigerator! Definitely will try this!

      This is not a Korean and Thai Chinese fussion dish. This is still a Thai Chinese dish but she gave the substitution for Thai Fermented Soybean paste to Korean Doenjang that resembles of this Thai Fermented Soybean paste to it.

      @@erdyantodwinugrohozheng The one in her original recipe is actually not Thai fermented soybean, but a southern Chinese one. Southern China is where Thailand got a load of immigrants from. There is no soybean used at all in non-Chinese Thai cuisine.

      @@cbunmingthis is actually wild for me to learn! As a Thai, my family uses lots of soybean paste in our cooking. Then again, we are Thai-Chinese lol. I guess I never separate my Chinese culture from my Thai culture. Tbh, without Chinese influences, we wouldn’t have the culture and cuisine that we do today☺️ It’s all so blended and well harmonized

    I made this recipe and it turned out amazing. I put a stainless steel steamer basket over the rice and put the chicken in it. It worked out perfect where you don’t get the mushy rice issue.

    My mom usually prepared this dish with warming the seasoned chicken part in the microwave, after the chicken was cooked, she poured the fat that came out of the chicken in the a cup of cooked rice and stirred well then it became an easy Khao Mun Kai for kids on the day we asked for something more special than the regular thai food. This is also an easy way and yummy way to cook it too. Thanks for sharing.

    A thai friend of mine posted a video of the more time consuming ‘traditional’ version of this recipe on her FB page about two years ago, in thai. I cook asian food fairly often, so i had a fair idea of the ingredients. I’ve cooked the ‘make broth from whole chicken and chunks of ginger and garlic and make the rice from that liquid’ version several times. I love the dish. Now i’ve invented a sort of abbreviated version that tastes great but the whole thing takes around a half hour start to finish, similar to what you’ve done here. I make it often and my kids are nuts about it. Your video is fun, thanks...

    Thanks alot for sharing. I am also half hainanese! Was brought up by my maternal grandparents who are from Hainan. One thing I missed the most was my late grandmother's chicken rice n was a pity noone learned her recipe before she passed on ): I will try to cook this for my family.

    Kao Mun Gai is something I can eat every day! I've been using my Instant Pot to make it quicker. I use all thighs because when my mom or Khun Yai made it old school, my sister and I would fight for the dark meat :)

    I make a Greek inspired chicken and rice dish with a similar technique. So much easier doing it this way, and the rice turns out so good with the chicken cooked on top! I'll be adding this to my repertoire!

    Easy to follow and tasty! I made it as one pot dish because we like the toasted rice at the bottom. Pairs well with Nam Jim Hai Lam, the dipping sauce #2 from the longer Hainanese Chicken recipe.
    Next time I shall add white pepper.

    Thank you for the easier method, and for people stuck with boneless skinless chicken, a supermarket with a Kosher section or Amazon has chicken fat in jars though it does have a slight onion flavor most of the time but that works well with this dish.

    Pailin firstly as a Korean your pronunciation of "doenjang" is great. Another reason why I would use it over miso is that doenjang is much heartier and works well with stews vs the delicate miso. Also with miso soup you are supposed add the miso paste at the very end to preserve the good bacteria. If you used miso in this stew you would be killing off the probiotics.

    I "accidentally" made something similar to kao mun gai in my instant pot last week. (We lived in Chiang Mai for 8+ years and my two little boys LOVED kao mun gai...minus the sauce though...) Costco sells the cookbook Instant Pot Miracle. One night I made chicken wings on page 50. That rendered a lot of chicken fat and weak broth. I saved that. The next night I used that broth/fat instead of water in my jasmine rice for the One-Pot Chicken and Rice on page 115. (I didn't use the five-spice powder, sesame oil or the mushrooms it called for plus I used uncut thighs. I know....why follow a recipe if you aren't going to follow the recipe? Because I am too lazy to run to the store for missing ingredients...) Since it called for grated fresh ginger in the marinade it was just enough to give a whiff of flavor to the dish. It was missing garlic too. Anyway, loved your video. Love you! I like your funny side comments and that you explain why you do things the way you do. Keep up the excellent work. We miss Thailand's friendly people and the great food. Your website is one way we still feel "connected" to our old home. Thank You!

    I really like the variation, khao man gai saep, I found one in Bangkok, the seller said it mix with namtok seasoning. I haven't find the recipe yet, but that's one of my favorites

    That is a nice looking dish and I may have eaten some of that at some of the parties I went to while in Thailand. I enjoyed the food they served at this one club where staff and customers of all the clubs in the area held their after hours gatherings.

      bman83 I tried it once! and my chicken wasn’t cooked properly ( maybe I put too much chicken) so I always cook it separate or you can try pre cook chicken for a bit before you put in rice cookers

    I love making this version the chicken can be a little dry if you use a rice cooker though.
    Best thing? Next morning, Chop up the leftover chicken, add to the rice and simmer in the chicken soup to make an awesome Jok “congee”. Just add leftover hainan dipping sauce to taste in your bowl….waste not want not

    Loved this dish when I was living in Thailand. It's a bit too salty so I don't salt the chicken and I substitute 1.5 Tbsp Healthy Boy Brand Sweet Soy Sauce for 1 Tbsp sugar then adjust the sweetness with a small amount of sugar and it's perfect. I also make 1.5 times the amount of sauce because I like it so much. Thank you Pailin.

    I've made the traditional recipe before. Will have to try this version!
    The recipe that I learned also had a dipping sauce where hot oil was poured over ginger and chopped green onions. Is that also served in Thailand, or is that more Chinese?
