- Cassava Pudding
Ingredients:
2 lbs cassava/yuca (approx. 2 1/2 lbs unpeeled)
6 oz freshly grated ginger
2 1/2 cups course brown sugar
1- 1 1/2 cups raisins
1/4 cup dark imitation vanilla
2 cans coconut milk
1- 1/2 cans Evaporated milk
4 tbsp butter/ margarine

I Love cassava especial Bamme thats from Jamaica. Like you I make mein with Soaked Fruits Prunes Raisen in Port Wine, Just Like when you make Plumpudding

Think I'm gonna try this with macadamia milk instead of evaporated milk, and monkfruit power instead of sugar and see how it comes out.
Let me know how it comes out. Definitely a a more healthier and guilt free version.
My mother use to make the best yuca pone I would love it so much. She would make it the hard way and it was amazing. I would beg her to make it all the time. I miss her so much 😢

Do you think cassava flour would work? Do you think I'd have to add extra milk to compensate?
I’ve never tried that before but cassava flour is very starchy and I believe would need extra milk but I’m not sure if you’ll hav the same texture because there’s no pulp either just the starch. If you try it , please let me know how it turns out.
i never understatement why the cassava can’t be boiled first instead of laborious Hand Gratering!!
