  • Potato Pound
    Ingredients:
    2 lbs peeled and finely grated batatas/sweet potatoes (2 1/2 lbs unpeeled)
    4- 6 tbsp freshly grated ginger
    2 1/4 cups course brown sugar
    1 1/2 cup raisins
    1/4 cup dark imitation vanilla
    1 can + 1 cup evaporated milk
    1 can coconut milk
    4 tbs / 1/4 cup butter

    This is an awesome recipe. This is one of my favorite dessert. I made it for the first time following your recipe and it came out great. My only challenge was to figure out when it was done.

      I’m glad you loved it. You definitely don’t want to over bake it but when the jelly look translucent in color and not as milky then it’s ready. Plus the edges will have a nice crust around it.

    Hi Nikki, I tried your recipe and the flavor was spot on. Delicious!! Mine didn't bake with the gel on top, do I need to add more milk or butter?

      I’m glad you tried it and loved it! Yes, you may need to add more milk. Sometimes the sweet potato/batata is dryer and requires more liquid.

    It's crazy how Belizean are using evaporated milk now, it was just coconut milk!

      It’s a matter of preference and using what you have available. For me personally it makes it more creamy and rich texture I prefer. However, you can use only coconut milk.

    How many ingredients to add to four pounds of potato pounds mom??

      This was a 2lb batch so I would just double ingredients more or less. However, as I mentioned I’m the video you have to look at the texture and consistency as you add liquids because some sweet potatoes/batatas require more liquid if it’s dryer or older. The ingredients list is in the description box.
