Thanks! There is indeed a lot to explore in Spanish cuisine, especially among the different regions. This was about Madrid, but for example Catalan and Valencian cuisine will have their own unique specialities.

That oxtail looked fabulous . A few years ago, I decided to make my fathers favourite "tinned " soup from scratch . Believe me it was not easy to find oxtail . Making the soup took many hours , my Father , sad to say once he realised it was made with a genuine tail would not even try it . I enjoyed the fruits of my labours though , as we are enjoying yours . Maybe if i had served it with the fried potatoes he would have been converted 😂 .
Thanks for sharing, I can imagine it took a long time to cook oxtail, I never tried, but I guess it's a bit of a tough meat and requires hours in order to tenderise.
@DanFandelli I browned the meat etc first , then put it in a slow cooker whilst I was at work . The aroma was a delight , at first I was disappointed at my Father , but my taste buds were delighted . Keep exploring , and having memorable meals 😋.

Adult pigs have a different flavor profile. A cochinillo is like veal while lechón is like beef. Totally different flavor profiles. Lechón, the battle is definitely between us puertorriqueños and filipinos.
I'm sure they serve the suckling pig both for lunchtime and dinner, however I can't say what kind of portion you get if you ask for 27£ suckling pig, as I had only a small portion as part of my tasting menu / tour of the cellars!
