I had wanted to try carrot cake for a long time because I am not from the States and used to see it in the movies. I was shocked at first that someone could put carrots in a cake, but as the years went by it kind of grew on me😂😂😂. This is the first recipe I ever tried and I was blown away and I would never change it, or try something else. It is just perfect

I tried this today. I instinctively added 1/2 cup less sugar and was glad I did. I used bread flour instead of AP without consequence. And rather than two separate disks, the whole thing baked just fine in one 9x12 Pyrex pan. This cake is begging for some ginger. Other than that, it's a good recipe. I used walnuts because that was all I had, but their flavor is too dominant.

.Very moist cake indeed. Some modifications: I cut the sweeteners down to 1/4 cups of white and brown sugar respectively plus 1/4 cup honey, for a total of 3/4 cups of sweeteners. It still came out moist and sweet enough. I also added 1/2 tsp of allspice, clove, nutmeg, and ginger each. It came out very flavorful. Will make this again.

I tried one time to make a carrot cake, but I failed maybe because I was using a russia recipe, and it was too moist. But one idea what I like is instead of nuts on top you can put an orange peel. That makes it taste better, but if you add only the orange part, not white, because it makes it worse taste, is what I heard. And right now, I will make a second time carrot cake, and I believe that it will be good and much better

Today I wanted to make a carrot cake as I had all the ingredients to hand so I turned to your recipe. I usually avoid non U.K. recipes, the cup measurements I find too imprecise. I followed your recipe to the letter, when mixing I thought there was too much oil and sugar too. My cake tins were smaller than yours, so I made some cupcakes as well. needless to say I’m disappointed as I’ve ended up with what I can described as a toffee crisp cake. I just tried this recipe and it’s really good! Just remember to reduce the amount of oil (at least 3/4 of what the recipe calls for ) and sugar (250grams is more than enough).
I’ve been making this recipe since 2017 and I looooove it. I just modified the sugar amount to less than a half of the original recipe, I use 150gr 50% white 50% brown and the texture of the cake is still good, and the cake is already very sweet. Thaks for this super good cake recipe ♥️

Even for those who don’t like fruit cakes , this cake was so moist , delicious and amazing! I couldn’t stop myself . This is literally the best carrot cake I’ve ever made and I made it for my Husband and his family and they absolutely loved it! I changed a few things, I used self raising flour and no baking soda(didn’t have plain flour at home) substituted the light brown for dark brown sugar and used 50g less for both sugars and finally added 1/2 cup of walnuts as well. I will definitely be baking this carrot cake again
It’s diabetes knocking on your door. 300g sugar for this cake is more than enough. 250g for the batter and absolutely max. 50g for the frosting. Sugar is something you get used to so easily, that’s why so many people have lost it a bit on the taste buds and need to just adjust back.

I also used some oat flour instead of regular and more spices like orange peel, and alsoooo the last time I used MORE carrot cause I had a lot xD. SO freaking moist and fudgy, that was the best carrot cake of my life! My family was crazyyy about it. 😍😍 (the next time gonna try to use butter instead of oil,that's gonna be the top)

I split this mix into two loaf sized baking tins. I actually prefer carrot cake when it's in the loaf shape. I also used a spoon and a half of nutmeg since a lot of other carrot cake recipes use that. Love this cake!

Hi! I have made this cake at least 5 times and yesterday, i tried to make it with less sugar. I reduced the amount to 180g White sugar and 180g Brown sugar. Everything turned out good! However, when i ate the cake, i realised some part of the cake had inconsistent flavour. A few bites tasted as usual, very flavourful however suddenly a bite tasted bland. Totally bland... Does anyone know what happened and why it tasted bland?
I just made this because tomorrow is National Carrot Cake Day. I didn't use raisins but otherwise I followed your recipe almost to a T. My husband said it was "the best carrot cake he has ever had", as he was especially happy with the frosting not too sweet. yeah you can really tone the sugar down. the 530 grams of sugar in this recipe is maaadness :D
