I recently found the better than bouillon and after doing the math and tasting it I am a total convert. It has better flavor than box broth and it’s way cheaper. Add to that you can store that jar in your refrigerator for over a year so you always have broth on hand without having to remember to pick it up at the store.

All those boxes I’ve bought over the years. DAng….and how many had to be poured out because I didn’t use the whole box and it’s only fridge stable for a week? So glad I watched this and read the comments. When I first heard it I thought, couldn’t be as good as boxed stock.

Such great tips. It's also very easy to make a gravy if you don't have pan drippings, for example when you are eating leftovers. I just make a roux (equal parts butter and flour), then add chicken or beef broth (using Better Than Bullion). It's not quite as good as gravy made from pan drippings, but a nice option if needed.

Why would anyone buy those disgusting jarred gravies? I just don’t get it. Full disclaimer I’ve bought them a time or two (I came from a home where cooking was not valued and everything pretty much came out of a box or can. If you tried to cook they yelled at you for making a mess). If I can do it, anyone can!

Fun fact… the grocery store beef is delivered vacuum packed with a shelf life of 60 days in a proper cooler. That same meat is also aged around 30 days, sometimes more before being vacuum packed and sent to the stores. The aging increases flavor. Nobody really enjoys beef that is fresh, and that’s because really fresh beef is tough.

Also, add salsa to anything and you add tomato, garlic, g. pepper, onion and vinegar getting alot of that umami wholesomeness. And add some fresh or rinsed canned or dried mushroom to make the flavor more complex and delicious.

Good for you for avoiding those products. I'm corn intolerant and already avoid all of those products. (In the US even citric acid is usually made from corn ruling out most canned products. Often natural flavors are made from corn too and need to be avoided.) I didn't know about the cream of chicken substitute. That is good to know since nearly all canned soups contain some form of corn in them. I'd love to find bouillon that is guaranteed not to have corn derived ingredients in it (often in the starch). Even most of the boxed chicken broth contains corn. I have yet to find a brand of beef stock that does not contain corn derived ingredients. Glad to have a substitute for cream of anything soup though!

@@rhondafergerson5338 I've never found that to be the case, even when I have "detoxed" from HFCS, it still tastes great after a while of not having it.
Regular corn syrup however always needs added sugar to make it palatable, and it's the best way to stabilize a lot of recipes, like the custard in a pecan pie. It's a useful pantry staple.
My family also used regular corn syrup on pancakes when we ran out of either maple or pancake syrup. It was kinda gross. My mother in law used to make a "maple flavored syrup" that she pretended was the same that was absolutely not a syrup; it was just brown sugar, water and maple flavoring. But it wasn't cooked, so it was just sugary water and my husband said no one in his family was fooled 🤣. You can buy a pancake syrup made with cane sugar, of course. It's good.

You obviously don't live in the South! We will not give up our self-rising flour. I probably use it more than all-purpose flour. It's a lot easier to make biscuits with it--you don't have to measure anything. It makes a great coating for fried chicken or vegetables--somehow it makes them crispier. (Of course, you have to have whole buttermilk, too. Milk+vinegar is not the same!) I've tried making a lot of homemade versions of things, but they're not always better. Good maple syrup is superior to pancake syrup, period. You just have to find the brand or variety that you like best. When I first tried maple syrup it tasted sweet but flavorless. It probably was a cheap brand but once I found The One, I never looked back.

  • @monkeeblue

You can make homemade maple pancake syrup. Lots of recipes out there and way cheaper than real maple syrup which is super expensive. It's easy...1 cup/240 ml water, 1 cup/240 ml white sugar , 1 cup/240 ml brown sugar, 1 tablespoon (15ml) maple extract/flavouring. Bring the water, white sugar, and brown sugar to a boil in a pan over medium-high heat. Stir until it's totally dissolved. Reduce heat to medium-low and stir in maple extract/flavouring. Simmer until thickened to syrup consistency, about 3 minutes. Cool and put in a bottle or jar and keep in the fridge. You can leave the flavour out and just have brown sugar syrup or you could add vanilla extract or paste if you prefer or whisk in some cinnamon to taste then let cool and store. Vaniilla + cinnamon would be good! Butter flavouring + pecan flavouring would be good too!

I’m with you on everything on your list except the pancake mix. Yes, store bought mixes are generally inferior to homemade, but I can’t live without my Kodiak Cakes!😆
Something I stopped buying long ago are flour tortillas. Homemade tortillas are without a doubt superior to anything you could buy at the store.
    3 c flour 3/4t salt 1/2 t baking
powder 1/4 c neutral flavored oil
    1 cup super hot water
Mix dry ingredients together and add the wet. Knead until a smooth ball is formed. Divide into 16 equal pieces. Roll into balls and cover with plastic wrap. Let rest for 1 hour. Heat a large pan on med high heat. Roll out tortillas with enough flour so they don’t stick. Cook for 30 seconds on each side until bubbles form.
I store them in a bread bag in the freezer.

I mostly agree with you about Walmart meats, but in rural areas you do what you have to. Our nearest stores are 20 minutes away, the grocery store meat is nearly twice the price of Walmart’s (and are sometimes already going gray on the shelves), and the butcher really doesn’t want to deal with customers if he doesn’t have to. So I either buy meat at Walmart, or wait as long as possible for a city trip when I can go to Aldi. It is what it is, and we haven’t gotten sick on Walmart meat yet (although I do always cook or freeze within a day or two).

I bought a cow from a friend who has a ranch. We've been living off that old tough cow for 3 years. While i have many things to say about the processor we chose... the meat, not being aged and just butchered and frozen, the meat lasts about 4 weeks in the fridge. I dare you to do that with store meat.

What is the purpose of the baking soda in the syrup recipe? To thicken it?

I actually prefer commercial pancake syrup to pure maple. I grew up in a military family and moved every year until I was 13 years old and I was 16 before I had pure maple. It just doesn't taste right to me.

I have been searching out local farms/ stands for our vegetables, eggs, fruit. For meat local farms might be more expensive, but there is no " mystery" lol 🤣 in the meat. Milk from a farm tastes much creamier too, especially if its raw. I figured if prices are more expensive anyways...I would rather that $$ go to a real farm.. hopefully it helps them stay open

I enjoy your videos but one thing about the Better than bouillon....it has a ridiculous amount of salt in it. One serving (1 tsp) is almost one third the salt we should have in a day. Homemade broth or the salt-free box broth at WalMart is far preferred and the WM brand is not expensive.

I started making my own broth by boiling my chicken bones. I found I had to throw it out recently because I didn't use it before it spoiled. Now I freeze it in 2 cup measurements. No more waste.

If you make homemade broth, it will keep quite a while in the fridge in a glass jar if you have a nice layer of solid fat at the top. Don't skim off the fat until you use it because it helps preserve the broth. Without the fat layer sealing it, it will spoil really quickly.

Maple syrup, we have similar recipe, molasses, sugar, water. While it's not " maple" syrup...its less expensive and much better home made!

I don't shop at Walmart period. In Canada, fruit has been available packed in fruit juice for forty plus years and I'm always surprised at how difficult it can be to find in the States. And that pre-made gravy is terrible!

I think I first learned about it from Bobby, so it should be. It tastes really, really salty though, so use a little less than the package directions, unless you like super salty broth.
