How To Make Sweet Tamales (Tamales Dulces) With Blackberry Cheesecake Filling

  • Sweet tamales (tamales dulces) are a favorite treat for many Mexican families during the holidays. They can be served as a dessert or for breakfast, accompanied by champurrado or coffee.
    The fillings and masa can feature fruit (pineapple, raisins, berries, coconut, figs), nuts, chocolate or nutella, and other sweeteners. Some recipes substitute salt for sugar, while others feature a plain masa with a sweet filling. This recipe for creamy, decadent blackberry cream cheese tamales from Mariana Alvarado of Masazul is a twist on a classic fruit cheesecake and a nod to Michoacán's tamales de zarzamora. We're using masa harina for the tamal dough, which lends an especially delicate, tender texture to the tamales. Feel free to substitute the filling of your choice!

      Hola! Para nixtimalizar el maíz, te recomendamos utilizar 1% de cal por el peso de tu maíz. Por ejemplo, 1 libra (16 oz) de maíz necesitaría 0,16 oz de cal.
