My ex-husband is Mexican and he always bought tamales at the holidays. Beef, chicken, & pork with red and green sauce... dessert tamales of sweet corn and raisins & cinnamon. Such a wonderful feast and many years later I’m yearning to learn how! Thank you for a great video. Done at the right speed with just the right amount of commentary. Well done indeed!

Haven't seen these made since I was a child in AZ circa 1960's. We went to the fields and picked the corn and went from there. We called them Green Corn Tamales.

Tamales are not part of my cultural background, so it took me over three years of practice to learn how. Not a total purest here, I use an electric steamer. I just bought the corn husks and flour to make pork tamales yesterday. My children are grown now , but this was something they loved.
I asked myself... what makes the Tamale so revered in the Aztec descendants cultures. So I did a little food research. What I found was the process of washing the corn flour (Maza) in lime adds complex B vitamins that go along way in the prevention of birth defects.
    I know I don’t think like a normal person 🙄

I have read this too! I also read that the Spaniards took the corn back to Spain and didn't know the lime step. It caused a lot of problems. Men obviously didn't watch the women process the corn, LOL!

I am both in awe of the natives finding how to make the most out of corn and turn a very poor centerbloock of cuisin into a very good one . . . But also compleatly flabergast that even in this day and age nixtamalisation still is not commen practise elsewhere despite many poor people mostly of of corn.
It is knowen, it is sientificly droben, why is not it in use?!

I have not seen a recipe like this before for tamale. The savory ones set up so nicely I guess because of the cheese, if you like a little heat the savory would be excellent with pepper jack cheese, but I would like with a nice white cheddar. This was a really great video for recipe and technique as well. Thanks for all your hard work to show us this.

Just a tip: as you're removing the husk sheets, discard the first 2 or three (too tough), then as you remove the rest, spread each one on one of your knees (it sounds weird but bear with me!). If a sheet doesn't go on your knee completely, discard that one. As you get closer to the cob, you might as well discard the rest because they'll be too thin and narrow. Don't worry, you'll have enough of them! And, unless the corn husk has been ripped to the cob, a corn husk is so tightly bound that no debris, dirt, or other things can get in between them. The exception are caterpillars, of course, and might as well put that one aside.
I've never had Mexican young corn tamales, but I've had Salvadoran ones most of my life. They don't add instant corn flour, or baking powder, they only make sure the corn cobs are not yet mature or too young. That's where I learned about sorting the leaves. One of my favorite ways to help make 'em!
I found this video that shows what I mean, sort of:
    ruclips.net/video/L0gTGyESY2E/видео.html
Thanks for a wonderful video. I enjoy watching them even if I don't think I'll make what you're doing.

Tamales are my favorite food and the corn ones are my favorite. I live just up the road from Zwolle, LA, home of the Zwolle tamales. The thing is, no one knows how to make corn tamales. Im a really terrible cook and these look like a whole bunch of work but I think I'm going to set my cap and give it a go. Thank you for the recipe and instructions.

I'd have to make these right after a meal because I couldn't wait the many hours it takes to make them to eat them. I'd probably make them for the next day. Or, maybe not. Thank you for the wonderful recipe. Do you cook professionally and/or have your own restaurant?

Remember i said can make a lot of things from tamales. Try this for breakfast. > FOR 1 PERSON ! Double for 2! and so on ! 1 tamale, 1 egg, bacon bits, some chopped green chilies. some picante sauce and any kind of cheese. OK warm up the tamale in a plate, in a micro wave with some water in the plate. This steam cooks it! Then take your skillet, or grill place some butter, add the chopped up green chili in it then take the egg cracked it on the green chili, and bacon bits, chopped it up ! when cooked, add to the tamale with the husk off and drain. Put egg , bacon, chili, Salt and pepper to your taste. with some CHEESE ( i like cheddar or mozzarella cheese ). on the tamale ~ warm it up in the micro wave, to melt the cheese.." Can GARISH with diced tomato's, diced onions, lettuce or Cilantro if you wish! " or Take it out, put your picante sauce on it, and ENJOY! YUM ! I call this : Tamale Ranchero he hee Remember to make a lot of tamales! i bundle them in 12's put saran wrap around them. Then foil around them. They last a long time by Freezing them, and make many things from them! Pop them on a plate with water and steam them hot, in the micro wave! about 2 or 3 min YUM

I love, love, love tamales!! The best ones I’ve ever had was Zwolle tamales from Zwolle, Louisiana. We lived in Louisiana when we first got married and always stopped when we went through there going to my folks in Arkansas. I can’t wait until we move to Arizona, and I can buy Mexican table cream. They don’t seem to carry it in Pennsylvania!! lol

Your tamales look great and I would definitely put a huge dent in the platter. But, I'm used to my tamales having some kind of spiced meat in them. Super video.....thanks!
