No idea if it'd be ideal for you, but maybe look into something like the xreal or rokid AR glasses. They say they are equivalent to something like a 100 inch monitor. It's surely not for everyone, but it might work well for you.
I have to say I watched your video. I understand that you need to travel with certain items, but I would not call this minimalist. I work on the road often doing demos and customer meetings. I carry almost everything you list for a full demo set up. I would love to connect and show you some alternatives to lighten that load. I feel you are carrying 30 lbs of gear when you could slim down and get the same effect.
