This is so timely. I just made my first Gratin Dauphinois hours before you posted this video. I didn't boil it with the cream and milk. I baked it for 90 mins in 50c and came out just fine. I also added some Brie cheese in every layer. I will try all of these recipes soon. Thanks!
As a fan of the Fat Kid Inside from waaaaay, way back, these rough around the edges contents make me feel like Erwan’s RUclips channel has gone in full circle. Watching him from the start when he’s still cooking at his parents’ kitchen in low budget (but great quality) prod, to his own pad, then becoming a husband with an all out prod in his studio. Now, as a dad still with equal, if not more passion. Thank you Erwan for sharing your journey with us thru your love for food, and travel, you’ve influenced our generation to be more smart/ conscious in our life choices, be it in trying to cook the recipes you share or copying your travel itinerary.🤓
Spuds are so versatile and are full of nutritious goodness. Roasted are my favourite way to cook them. I cook them completely through on the stove first, drain and let dry then toss them in fine semolina mixed with thyme (or rosemary) and ground dried garlic. I never use olive oil to cook as it has a low smoke point and I like the fat to be HOT. Duck or goose fat are superb but I also find cold pressed rapeseed oil is excellent. The potato variety is crucial so I’d test a few out. Here (in UK) I use Rooster, King Edwards, Maris Piper or Yukon Gold, dependent on what’s available. Rooster also make the BEST French Fries (triple cooked, fried in Duck Fat or Beef Dripping) so I’m looking forward to that promised video. Keep up the great work. I find these videos very inspiring.
