Hy guy, nice presentation and comparison!... 👍 I personally have several Eastman guitars, including an E!OM, which I am very proud of... From your video one gets the impression of a brighter and more present sound on the highs in the Deluxe, even if, in my opinion, the Regular maintains more incisive bass and a nice woody tone!
The thermo cure gives it A sound, But the non deluxe will sound like a guitar should, if you play everyday it will open up quicker than you think. Cooking the wood is not the same as playing in a new guitar. Just my opinion. And I'm sticking to it.
The Deluxe has a more dampened sound from all the glossy finish but it's more like what people are used to hear in a higher end guitar... The simple E1OM sounds drier and more opened but really pleasing also
There is almost no difference, but sound is subjective so. I will say that unless you just love gloss, it's not worth the extra money. Acoustic pickups are cheap if you really need one. Plus , is the difference in sound from cureing or just 2 different pieces of wood.

I wonder how they both would sound with heavier strings. They both lack presence IMO.

It’s not bc of just gloss, it’s a tempered top.
The deluxe has a better sound IMO. I own the E1D deluxe, so I might be partial to the deluxe version.

I prefer the sound of the Deluxe. The regular e1om is a little too raw, for my taste.
Problem is: it is not a dovetale! No vibration no sound
