I like to think the terrible names for humans are because the story is actually told from a Pokemon's perspective and they don't actually now their names, just made them up as they go.

I like to think, since they said Umbreon’s ears don’t work with no holes, that Espeon just telepathic shares what is being said, and when Simphony tries to tell Umbreon that she loves him, Espeon just chooses not to share that.
