- Today I'm gonna share this recipe with you the Spicy Touchu Fish with the help of my Mom. It is a flavorful dish featuring fish fillets cooked with spicy sauce made from ingredients like soy sauce, rice vinegar, sesame oil, garlic, ginger, and chilli paste. “Touchu" usually refers to a specific style or regional twist, but the core concept is spicy, aromatic fish dish. This is the last episode of me and Mama Lian cooking together, at least for a little while. I hope you’ve enjoyed this series of ours cooking! Maybe next year again? 🤞🏼

Ingredients - Fish:
✏️1 kg - Red Snapper (score the fish)
✏️A pinch of salt
✏️Cornstarch (rubs whole fish)
Ingredients - Sauce:
✏️50g - Ginger (slice)
✏️8 cloves - Garlic (minced)
✏️2 nos - Shallots (slices)
✏️2 tbsp - Hydrated black beans
✏️80g - Topanjiang (chilli bean paste)
✏️2 tbsp - Soy sauce
✏️2 ½ cups - Water
✏️¼ cup - Kombucha
✏️½ tbsp - Tapioca starch (mix with water)
✏️2 tbsp - Chinese black vinegar
✏️3 tbsp - Sugar
✏️1 no. - Red chilli (slices & remove stems)
✏️¼ cup - Pitted black olives
✏️Spring onions white parts & green
Garnish:
✏️Coriander
✏️More Chillies
