Goulash and Two Minute Cornbread-An Old Fashioned Country Comfort Food-Our Version of a Favorite!

  • Goulash and Two-Minute Cornbread
    2 pounds hamburger
    1 green pepper, diced
    1 onion, diced
    1 tomato, diced
    1 can chili beans, drained & rinsed
    2 teaspoons minced garlic
    6 ounces tomato paste
    29 ounces tomato sauce
    1 quart tomato juice
    1- 10 ounce can Rotel diced tomatoes, undrained
    2 Tablespoons spaghetti seasoning
    2 teaspoon garlic powder
    2 teaspoons Italian seasoning
    1 teaspoon salt
    1 teaspoon pepper
    1 pound box macaroni, cooked and drained
    Brown hamburger and drain off all the grease.
    Add all the ingredients, except the macaroni. Let this simmer until the vegetables are tender, stirring frequently, while you cook the macaroni.
    Stir in the cooked macaroni. 
    Two-Minute Cornbread
    2 cups self-rising cornmeal mix
    1 1/2 cups buttermilk (or whole milk)
    1/2 cup melted butter
    2 eggs
    2 Tablespoons bacon grease
    Preheat oven to 425°. Place an 8” cast-iron skillet in the oven with two tablespoons of bacon grease.
    While the oven and skillet are heating, mix all the ingredients thoroughly in a large bowl. When the oven reaches 425°, remove the skillet, coat the bottom and sides of the skillet with the melted grease, and stir the extra melted bacon grease into the cornbread mixture. Place in the oven for 20 to 30 minutes or until the center is done and the top is golden brown.

      It would also be wonderful to have the recipe and so you could just copy/paste it so you can print it out. I usually just find the recipe/copy paste it and them print it off. I have almost a cookbook of your recipes. I love to watch you, and you are an amazing cook.

    My little German grandma made it with ground beef, onion, green pepper, a small jar of Raghu spaghetti sauce & chili powder. After everything was mixed and simmering she's chop up a head of cabbage and put that on top & cover. It's done when the cabbage is cooked down. Stir it all up and serve. I think the cabbage stretched the meal so you had a lot of servings.

    My mama made "Hungarian goulash". Browned ground beef, stewed tomatoes with their juice, garlic, lots of paprika, onions, and peas and, macaroni! Salt and pepper, of course. So good!

      @comesitatmytable9044 I do a vegetable soup with V8 as a base, and that's how I cook the noodles in the dish. Occasionally, they will pick up too much of the juice and get huge if you use egg noodles.

    In the recipe for the cornbread, you have an 8 inch skillet but Tom poured the cornbread mix into a 10-inch skillet. I cook cornbread a lot and I have my mother's cast iron skillets. 8 inch and 10 inch.

    A tip for adding tomato paste, whether from a tube or can, make a well a little clean spot at the bottom of your pan and give your paste two or three minutes of you smashing it against the heated bottom, stir it around so you kind of “wake” up the flavor and it takes away any “can” taste, it’s kind of a way you can also wake up those dry spices you are using. The hot bottom of your pan or skillet helps wake up your dry spices, just a minute or less on them accents their flavor immensely. It’s a wonderful technique and habit to get into. ❤ this recipe sounds wonderful. I always thought of goulash as an inexpensive dish by throwing together some things you already had on hand but with this list of ingredients I think this could be as expensive as lasagna to make. Do you agree? Sure sounds wonderful! Thanks Tom and Melissa another meal I wish I WERE at your table! 😊

    When I was a kid my mama would make it with hamburger, onion, whole canned tomatoes, Italian seasoning, and elbow macaroni. If she happened to have a green pepper she would add it. But that was a special treat (LOL). Having breakfast for supper is another great memory.

      The way I make mine along with cheese of I have it. Simple hamburger,
      macaroni, onion,couple cans of totatoes and any bell pepper if I have any to use up. Never green though.

    My Mom never made goulash. Was introduced to it by my Dad's sister, Thelma when we went to visit one summer. To me, I guess it just isn't goulash unless it is how she made it. Agree there are probably as many different recipes as there are families who make it. (Kind of like Colcannon.)
    1 lb ground beef
    1 bell pepper, lg chop
    1 sweet onion, lg chop
    2-3 ribs celery, sliced thick
    3-4 cloves garlic, minced
    2 tbsp olive oil
    29 oz (or thereabout) stewed whole tomatoes, with juice
    Lg can tomato sauce - to taste
    6 oz can tomato paste
    1 tbsp Italian seasoning
    1 tsp basil
    16 oz box lg shell macaroni, cooked according to directions.
    Saute onion, bell pepper, celery, spices and garlic in oil until crisp tender, set aside. Brown and drain meat. Add everything to pan but sauce, incl pasta. I break up the tomatoes by crushing in my hand, cut off stem end if still there. Stir well. Add as much sauce as you like, thin with water if needed. Taste for seasoning, add salt and pepper if needed. If tomato flavor bitter, add up to 1 tsp sugar. Heat through. Serve with garlic toast.
    My cornbread is half cornmeal, half corn flour, egg, cream corn, sugar, melted butter, baking pd.

    We’ve been married for 54 years. My husband keeps talking about goulash but I couldn’t figure out what he wanted. I would look a recipe up but he would say no that’s not it. But I made this. It was perfect. He loved it.

    My sadness in life is having diabetes.I love goulash!I tell my hubby if I knew my death was imminent my final meal would be goulash and chocolate cake! I miss it soooooooooo!

      I also have diabetes. You can make any pasta recipe and put it in the refrigerator overnight. Warm it up the next day and it will not spike your blood sugar!

      Having diabetes should not keep you from enjoying food you love. Besides having something once in a while and watching portions, there are alternatives. Duncan Hines makes keto friendly cake mixes and frostings which are good. I don't have much of a problem eating pasta but I do watch portions and have some kind of vegie with it. I also have an insulin pump and that helps a lot. There are many pasta alternatives including recipes to make low carb pasta.

    I use the same cornmeal mix as Tom, I put a heaping cup of cornmeal mix an egg a cup of buttermilk and 1/2 cup of mayo. Put that in a bacon greased 8 inch iron skillet and bake according to directions.....So good and moist.

    May I suggest that you put a container of spatulas on each side of the kitchen. They can be put into a tall container with handles down, almost like a bouquet of flowers. You can get different colors. I have a container at my prep station and one at the cooking area.

    My mother made goulash and I love it. She didn't put beans in it though. She put a lot more meat in it. She'd use ground chuck and ground round, I'd say 2 lbs a piece, chopped onions and green peppers and instead of using a chopped tomato, she'd use a can of chopped tomato's in their juice plus a big can of whole tomato's that she'd smoosh up with her hands which made a bunch of tomato juice. no oregano, just lots of garlic, salt and pepper and some paprika. The meat gave it a great flavor and I love the large macaroni's. My family is from the deep South (Alabama) and yes, it is great Southern comfort food.

    My family's Goulash recipe is quite similar. Stewed/diced tomatoes aren't popular with several members of the family so we use Tomato Puree, Tomato Paste, and for a slight flavor kick, V8 Vegetable Juice rather than tomato juice. Sometimes, we add Hot Italian Bulk Sausage in addition to the Ground Beef.

    When I think about Goulash, I think of Hungarian Goulash with the chunks of beef, paprika, carrots, potatoes or egg noodles, and, of course, the sour cream. I make something similar to this dish that I made up one night when I was 15 when my mom had to work late. My mom was so surprised to see that I created this masterpiece. She loved it & requested I make it on a regular basis. She would ask me all the time how to make it, but she really just wanted me to make it. My ingredients were a little different as I didn't put peppers, beans, or all the tomato stuff. Just a jar of tomato sauce. The pasta was egg noodles & there was shredded cheddar in it and sliced American cheese on the top. I worked with what ingredients we had in the house. Baked in the oven just to get everything melted together. I've changed the ingredients around over the years just to make a different flavor. One version was with ground turkey breast instead of chopped meat, cream of celery soup instead of tomato sauce, whatever pasta i felt like, mixed veggies or small pieces of broccoli & cheddaar & or velvetta cheese melted in the casserole. I haven't met a casserole or a Goulash that i didn't like.

    My Grandmother made the Hungarian Goulash, the must have ingredient was paprika. She also used the wagon wheel pasta, which we loved. The tomato base you are using of course is what she did and she added beef broth, and also beans.

    I am German born and raised and we ate a lot of Goulash which is actually a dish that originates from Hungary and can be traced back to the 10th century to herdsmen of eastern Hungary - the gulyas- it is the national dish of Hungary but the Germans adopted it as well and eat a lot of it. The difference between American goulash and the real Hungarian goulash is that the Hungarian version consists of cubed meat like that from a Chuck roast, has a lot of sweet paprika in it which gives it that red hue, onions, salt and pepper, some lard to brown the meat in it and some water. It contains no tomatoes, ground beef, beans or noodles which the American version does and which sounds more like a chili type stew to me and has no resemblance to the original goulash. My grandmother always made the original version when I grew up in Germany and it was served over egg noodles, it is semi thin since it contains no flour and is very tasty!

    My Daddy always made great goulash. His was very similar to yours. Only Rotel and the chili beans weren't available then. So he added canned green chiles and regular red beans. Sometimes we only had stewed tomatoes; so that's what we used after chopping up the tomatoes a bit. I'm going to try your recipe this Mother's day! Thank you both for all the work y'all do it !❤

    Never enough cornbread. So good as a snack in a glass of milk or just a reheated piece with butter alone or whatever (jam or honey or whatever) or in cornbread dressing! Yum! No sugar in cornbread!

    Everyone does make Goulash different, like you say even next door neighbors do it differently. Momma always made it when she made chili because I didn't care for kidney beans. That's the only time she made anything different because either of us girls did or didn't like anything. I remember many times hearing Daddy say your Mother is not a restaurant you eat what is made or don't eat! Now that I'm getting old I like almost any beans (still don't care for kidney beans) but I can't eat many tomato products. Thankfully I'm creative because there are tomato products in a lot of recipes! I never had cornbread growing up (I live in Michigan) but have tried making it a few times as an adult. I've never liked it but after my daughter lived in Texas for a few years she informed me it's because I don't have the Southern know how! 😊

    I was going to send you my mom's goulash recipe for consideration for your subscriber Sunday's, but since you asked. This also my go to comfort food. This is the only Goulash recipe that I have seen that doesn't include tomato, it is what I grew eating once a week. This was published in one of Southern Recipe's cook books back in the 70's and mom received a free set of their cook books for her contribution (she loved to tell people that her recipe was published.) Try it, it's different and I think you'll love it like I do.

    1 lb ground beef
    1 lb breakfast sausage
    1 lb pasta (cooked and drained, my mom always used either macaroni or shells, I like it with bow tie pasta}
    1 bell pepper (chopped)
    1 med onion (chopped)
    2 cans cream of mushroom soup
    salt and pepper to taste
    1.) Brown ground beef and sausage together, crumbled so that you can't tell one from the other, drain.
    2.) Add soup and pasta and mix all together, add salt and pepper, cover and simmer 5 or 10 minutes till everything is heated through.
    3.) Eat and Enjoy.

    Your is close to mine, made it yesterday and had it again today. I make mine with noodles and tomato juice, garlic seasoning, Rotel, peppers and onions, red kidney beans and serve with Jiffy cornbread mix. It is a family favorite and I probably will not make it again until next winter.

    Tastes great with ground turkey too.A little healthier.
    Low salt Italian stewed tomatoes.Green peppers,onion and garlic.
    Mix it together and put it on your elbow macaroni and...🤤

    I moved from southern Illinois to northern 7 years ago and met the sweetest little old lady, shes 82 and is basically my adopted grandma. She puts Heinz ketchup in her goulash and ive never had a better one. Maybe because it reminds me of that family feeling i had in the south and maybe because its amazing. Just a reminder of home for sure......also going with one of my grandmother's tricks, try cooking cornbread in a waffle iron. Its amazing for dipping 😊

    This takes me back to my childhood! My stepfather was a true master chef. He could cook anything and make it taste great. My favorite dish was his Hungarian Goulash.     My momma made hers with ground beef, onions, canned diced tomatoes (italian style), tomato sauce, tomato paste , macaroni and green beans mixed in. I like how everyone has their own recipes for this. My aunt made hers sweet which i didnt like.

      I add creamed corn, real honey, a dollop of sour cream, and just a wee spoonful of brown sugar to mine. Turns out fantastic. But I guess I'm doing it wrong 🤷‍♀️

    My mom made goulash quite often. It fed our family of 7 with enough to have seconds if we wanted more. We canned everything, except for beans. Her goulash was so good! I think the home canned tomatoes was what made it so much better than any I have ever been able to cook. I’m going to give your recipe a try. She never used beans in hers, but I’m going to give it a go. Thank you for sharing your version of recipes!
