Bierock (AKA Bierroche Burgers) - Subscriber Sunday #2 - A Volga-German sandwich - so tasty!

  • Bierock (AKA Bierroche Burgers )
    1 - 1 1/2 pounds hamburger
    1/2 medium chopped onion
    2 cups raw shredded cabbage
    1 cup sauerkraut, save the juice
    1 teaspoon salt
    dash of pepper
    1/2 teaspoon garlic salt
    1/8 teaspoon celery seed
    2 teaspoons mustard
    Save the kraut juice, adding enough water to equal 1 cup. Using a large skillet over medium heat, brown the hamburger and onions until the hamburger is done. Drain off any grease. Add the rest of the ingredients, including the kraut juice/water, and bring to a boil, stirring well to combine. Reduce to a simmer and cook uncovered until liquid is gone, about 30 minutes. Serve on buns.

    Tom….my family has made what we call “Kraut Burgers”. Brown 1 lb of ground beef, tsp onion and garlic powder, salt and pepper to taste, drain. And a can of sauerkraut (drained well first) and mix with ground beef. Add 8oz shredded sharp cheddar cheese until melted. Let mixture cool. In the meantime use 1 can grand biscuits (southern style or buttermilk) roll out on pastry mat with a little flour until the round circle is at least twice its size. Use a large cookie scoop and put mixture in middle. Bring up all sides of biscuit dough to the center and pinch close as you go. (Hard to explain) place on cookie sheet pinched side down. Rub a little flour on top. Bake 15-20 mins at 350 until golden brown. Delicious, and easy!!!!! Enjoy!

    I worked with a sweet lady whose family is German when I lived in SE Kansas. She gave me her family’s recipe for this wonderful meal and it was one of the best things I have ever had! I will say it was a PROCESS! Everything in the recipe was hand made including the dough that it was baked in. They were the size of your palm and incased in the fresh made dough like a ball or dumpling then baked. Yum!!! Now I can say her family didn’t used sour kraut it was all cabbage that was cooked down with the meat and onions. It’s been decades since I’ve made them and will be digging up my recipe soon! ❤

    We have an older couple, in their 80’s, that comes to our Bible study, they we’re both from Germany. They were farmers in Colorado for years before moving to south Alabama near us. We always have a meal at our Bible study , I’ll make this for them. Thank you!! ❤

    I'm from Lincoln Nebraska. We call them runzas here. They are made inside bread dough. We love them. The filling also freezes well. Thanks for sharing!

    I love Kansas! Probably for the reasons those who live there may not. I love the flatness, the way you can see a house miles away. How you drive for hours and not see much but land. I love the little towns along the way. We live in East Tennessee, very different from Kansas, but my brother lives in Denver so we've driven through there several times.

    If you have time, I think making the bread from “scratch”, makes this dish phenomenal! I am 71 yrs old now. I was 7 years old when my aunt made this and invited my family over for dinner. It made SUCH an impression on my tastebuds and memory, I can still vividly recall how fabulous it was! The yeast bread enveloping the savory filling was THE BEST thing I had tried! If anyone would share a recipe along with the bread, id very much appreciate the effort!

    Wow! Awesome. I’m a native Evansville, Indiana girl. Mostly Dutch German community. On one side my great grandfather came from Germany. We would have used Barvarian Kraut. That’s the differences in cooking from region to regions. So interesting to see how others do things. 😊 that’s what makes cooking so fun. I’m working on getting a few to y’all. I think you should continue this through the summer. It’s fun, and I think it’s a great way to bring the CSAMT community together. Ty to the sweet lady who submitted it.

    Sounds like any easy recipe to prepare and yes the sauerkraut juice with water added to make one cup is missing from the ingredient list. Love this channel, so down to earth.

    Love these
    My grandmother was German. She told me stories of making them for her father and brothers. Wrapped meat and cabbage in dough and baked them. They would wrap and carry them in their tin pails. They used sauerkraut or fresh cabbage sometimes both. The meat was usually made from leftovers of Sundays supper. The bread dough was usually a beer bread dough that also added flavor. Some would add cheese that was drying up.
    For those who don’t like cabbage leave it out and add cheese.
    My favorite way to eat them is to dip them in mustard. Dijon makes them fantastic and spicy. Catsup makes little kids happy.

    I’m from Salina, Kansas, and in the early 70s, the high school I went to served homemade bierocks. They were delicious! I have the recipe my aunt used after I was married, and made them several times. I will now make more of them!

    Good morning Tom & Melissa, there is always something new to create for the table. I had to smile - broadly, as Tom was getting the flavours of the burgers. Admittedly he confessed it was a bit different, but as the flavours settled, he really and sincerely enjoyed this recipe. There are a few good flavours added making this a winner recipe. Glad you tried it, and shared it with us. We like tasty and nutritional foods so this will be a good one for us to enjoy. I can imagine you are snowed under with good recipes.     I will be trying this recipe. I used to make many things & put in the freezer when I was working to save time. I made some birocks as well to freeze as well as many other items. To save time at times I would use Rhodes frozen rolls & roll them out fill them with birock filling pinch them shut bake off & done. Great to grab to put in a lunch pack when headed out to work.     I made Bierock last night to have for St. Pats Day. I do make the real bread dough ones. We spent 6 years in Germany while my husband served in the US Army! My fillings a little different but yours sound wonderful! I never added kraut to mine but may try it next time! I’m a faithful viewer of your RUclips channel!. God Bless you both!

    I grew up near Paducah, Kentucky and had never heard of Bierochs or Runazas until I moved to Natoma, Kansas to teach school (a town 60 Miles Northeast of Hays. I had to ask the first time Bierochs were on our lunch menu. I was a fan from that point on. The cooks in our small school made them in a sealed pocket of yeast bread and the fragrance was delightful on the days when those were baking in the oven. One of the cooks was my neighbor and gave me her recipe, and I make them quite often for myself since I have returned to Southern Illinois. My neighbor did give me a shortcut for the Bierochs -- use all Sauerkraut but drain, rinse, and wring to dry (I found that I liked the taste and texture better with this method). I also make Cornish Pasty that has a similar story only the crust is short like pie and potatoes replace the cabbage (I learned to make these while living in Southwest Wisconsin).

    I always felt that the kids in my school district we so lucky because we got to have these every so often for our lunches. I and a friend of mine loved these so much that we would wait for the younger kids to come in to eat because many of them wouldnt eat them and we could then have seconds!...lol She and i thought they were crazy not to like them!! Years later, i tried making them but something seemed to be missing. I think the flavor i didn't have was the kraut! I will have to try this recipe! Thank you!

    This looks really tasty and so easy to prepare. I must say, I had to watch this video twice cause Tom’s expression when he tasted the bierock was priceless lol! So glad he enjoyed it and thanks to Denise for submitting the recipe. My ex husband is German and he loved me to make meatballs in sauerkraut which contained both a chopped onion and chopped apple to flavor the sauerkraut.     I tried just about every dish in different towns while I lived in Germany. There was one dish that made me gag, and I wrote it down so I could avoid that dish. The food there though was amazing! Thank you for this recipe! It brings back good memories! 💕

    New subscriber! My mom always used the same from scratch dough for bierocks she used her cinnamon roles. I cheat using frozen Rhoades dinner roles (white or whole wheat if you can find them). Let them rise using instructions on the bag, role them out with flour of course and and fill with filling. I cook cabbage (yes sometimes the shredded in the bag), ground beef and diced onion, salt to taste and I like lots of cracked black pepper. Great with or without adding Kraut. Great served with your favorite mustard. Addicting! Usually make 50 to 60. Because of your video, I'm going to have to make some! Thank you!

    I love sauerkraut and growing up my dad always said to buy a brand that comes in a glass jar. Stay away from canned as in metal cans.
    I bet your kitchen smells great!.

    We have always made the traditional Bierrocks with beer not sauerkraut juice.I learned the recipe from my Mom. I never thought about using a bun instead of enclosing in a bread casing. When I do make them I make a huge batch and freeze them. Thanks for the short cut! Very popular in the Central CA area. There used to be several shop you could buy premade.

    My husband is pure German. He reminisces all the time about the things his mom cooked when he was growing up. His mom passed about 25 years ago and the recipes seem to have disappeared over the years. I'm going to make this and see if it reminds him of his child hood foods.       Great idea! I love horseradish mixed with mustard and Mayo with a little salt and pepper. I make this sauce every holiday to go with ham and Turkey. It’s delicious.

    I love Bierocks, I put mine in a pocket pita 🥙. You know us German girls love anything with cabbage 😄! I haven’t tried adding Kraut, oh man it goes without saying I need to next time…yum! A little Swiss cheese, and some mayo mixed with horseradish for a spread is good too.

    So easily made with Rhodes frozen rolls, the larger size. Let the rolls thaw, flatten out, fill and bake. I made these once to send to my grandsons from Kansas to Florida. The cost of shipping and dry ice was horrific but they loved eating the bierocks.

    These are fabulous! My husband was raised in a small town just about 70 miles from Hayes KS in Dighton and these have been a stable to go meal for us for about 60 years the recipe passed on from my mother in law. We make ours a little different ours does not have sauerkraut but everything else along with grated cheese. Ours is made with Rhodes Texas rolls so they become a on the go sandwich., easy for lunches. picnics are good hot or room temp We also have made it with diced ham and cheese along with the everything else from the original recipe. Now that my family is grown with their own homes we don't make them as often as we once did. But thank You for the reminder of a great recipe. I will have to try this with buns seems a lot easier and quicker.
    Enjoy your video recipes, they are mostly simple quick but yummy that go together quickly for busy people. Thank You for your time and effort you put into them, I really appreciated. and have tried many of them.

    I just have to try this recipe for my family. Not all of us like sauerkraut. Some of us love sauerkraut. I'm going to have to try it for everyone.     What a great recipe to share, anyone who tries it is going to love it. I came across a Bierock recipe 10 or so years ago and knew I would love it. It's so easy to tweak to your own liking because as you said there are a million recipes out there. I'm a real kraut fan so I add a bit extra along with some dill, also it's good served over rice. As a sandwich or over rice you just can't go wrong. You two are great, I'm eagerly waiting for next Sunday's surprise!

    I can picture an old German lady making her own dough to encase the filling in. And I sure would like to taste them that way. However, I’m not a good baker.     I lived in Kansas for 2 years and yes, I learned to make Bierocks! They are wonderful however mine didn’t have kraut but I will add it next time. I did roll them in yeast dough and baked. I’m so glad you’re sharing this great dish with your viewers! BTW, I watch you EVERY day!

    We used to have a couple German restaurants in our area in the Capital district area of NY. I think they’re all gone, at least the ones we knew about. Since I’m of mostly German descent, I love German food. Sauerbraten is my favorite! My Mom used to make it for the family, and we loved it.

    Hello Tom and Melissa-I am also from Hays (now from Colorado)-this is the Volga German version of Bierrocks. My family's version was just steamed cabbage with onions, salt and pepper and then you would add in the cooked hamburger (depending on how meaty you wanted it). We cheated on the bread dough and used Pillsbury Hot Roll Mix. We did not use any kraut in our bierrocks. I have to say, no matter which version, they are all delicious. During Lent, my Momma would eliminate the meat and we would have them made with the cabbage mixture only-no meat Fridays! In this area of the country (Hays and surrounding), we ate steamed cabbage and onions and then added browned buttered noodles into the cabbage mixture also for dinner. if there was a way to use cabbage, noodles, cream or butter, it made it to the dinner table. My father was Sheriff of Ellis County where Hays resides in the 60s. I about fell off my chair when I heard you say Hays. You did a wonderful job and your pronunciation is perfect. Love your videos

    I think a slice of Swiss cheese would be tasty on it. I want to try this just as written and then with some Swiss cheese. I might go so far as a little Thousand Island dressing too.     My father was Volga-German, from near Hays. I learned from him to roll out prepared dinner roll mix, cut it into squares, put the filling in the center, fold the corners together, and seal the edges. I've never thought of serving the filling on buns, but now I have to try it! He always served them with potato soup. On Fridays, he'd fill them with just sauteed cabbage, and called them kraut bierock.
