- So - Tender Swiss Steak
1 cup all-purpose flour
2 teaspoons salt
1 teaspoon pepper
2 pounds round steak, cut into serving sized pieces
Vegetable oil
1 medium to large onion, sliced and separated in rings
2 cups boiling water
2 Tablespoons Worcestershire Sauce
Gravy:
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/4 cups beef broth
In a shallow bowl, combine flour, salt, and pepper. Dredge steaks a few pieces at a time. In a skillet, brown steak in oil on all sides. Layer onion slices and steak, alternately in a Dutch oven. Combine boiling water and Worcestershire sauce and pour over the steak and onions. Cover and bake at 325° for 2 to 2 1/2 hours or until the meat is very tender. Remove steak and onions to a serving platter and keep warm. Save the pan juices.
Make the gravy by placing the flour, salt, pepper, and broth in a jar with a tight fitting lid. Shake until this is well mixed. Using a sauce pan, bring the pan juices to a boil, then pour in the broth mixture. Stir for approximately two minutes until slightly thickened. Pour gravy over the steak.

I do believe your cooking tutorials is just what every new cook needs to learn how to make good old fashioned favorites. I love your videos.
One of my absolute favorites! With mashed potatoes and a side of granny green beans, that's comfort food at it's finest! Have a wonderful blessed week!
Tom & Melissa… I fixed your “oh so tender Swiss steak” for dinner and we just finished eating. Oh my, you weren’t kidding!!! Sooo tender! I fixed mashed potatoes and peas with ours. My husband loved it! Thank you for sharing this and so many other delicious recipes! Thanks also for sharing your love for the Lord and His church. Have a wonderful week! ❤
I haven’t had Swiss Steak since long before my mother passed away. Her version had tomatoes in it. Absolutely delicious. Miss it, but not as much as I miss her. ❤
My Mom used to make it with the stewed tomatoes with onion and celery. I love it both ways. Hard to beat!!
My mom made it with steak onions and squished up whole homecanned tomatoes or crushed tomatoes, with lots of black pepper.
SWISS STEAK !!! A GREAT WAY TO SHOW YOUR FAMILY HOW MUCH YOU LOVE THEM !!!! THANKS FOR YOUR RECIPE ♡♡♡♡
That was Swiss Steak in our family, too. Stewed tomatoes, onions and green bell pepper in the braising liquid. Flour was pounded into the steak pieces, before frying. It was my dad's favorite way to eat round steak.
My mom used tomatoes too ❤
I am so happy to see your recipe. I'm 70 years old. My mom used to make Swiss steak with gravy when I was a kid. I couldn't find her recipe since she hadn't made it since I was about 10 years old. She used round steak as well. None of this modern hamburger patties I see used in new recipes for Swiss steak. Lol. Round steak was always cheaper and this was always a great way to have round steak tender enough to eat it.
I think she had a slightly different technique, as I remember her cooking it all in a big pan on stovetop. But it still simmered for a long time. I can't wait to try this. Brings back memories of my Italian mom, who passed away 3 years ago. I love your explanations and running commentary, as I think its a great way to teach and encourage young cooks.
My mom made her's like your mom did (back in the 70's). She passed away 3 yrs ago as well. Lord do I miss her; I think of all the meals she cooked for our family often and make them here and there.
I agree; their videos sure help young cooks with the great instructions!
Oh wow! Looks delicious 😋. I'm a single lady, so I love to cook once, freeze, then warm it when ready to eat. Nothing compares to a home cooked meal. Definitely trying this recipe 🙂🦋
My mom taught me how to make this when I was a teenager. She called it poor man's meal, because it would feed me my brother and her and still have leftovers for her to take to work the next day. She would have the steak tenderizer at the butcher. When it was done we had mashed potatoes and green beans and biscuits to sop up the gravy. I made it for my husband on our first date and he fell in love with it. He said that was when I fixed that he knew I was a keeper.
Yummy.
My stomach is growling for some of that comfort food which looks so scrumptious!!! Thanks Tom and Melissa, enjoy your dinner and God bless you both! ❤
We would use the dredging flour to make the gravy so it would not go in the garbage or to waste
I just joined you about a month ago. Your style of cooking is just what I’ve been looking for. The way that you present your recipes is so clear and precise. I’m a baby boomer and been cooking for years but I sure enjoy new recipes and simple ingredients. Sharing with us is no easy task. I’m sure RUclips is a lot of work. So thank you for what you do. ❤
Love Swiss steak. My mother airways put green peppers in hers. Delicious!
And tomatoes.
I've never had a tender swiss steak, so I might give this a try.
Swiss steak has always been my favorite meal ever! My little Mother would fix it for me on my birthdays. I fixed it tonight for dinner. I do put peppers and tomatoes with my swiss steak. ❤❤
Oh my gosh! I just fixed this last night. My mom always fixed it with a tomato gravy. I did mine in the instant pot for the first time. It turned out tender and delicious. I love your channel.
EVERYTHING they make is delicious!!!
Another winner of a recipe 🙂🙃🙂🙃 and a technique lesson all in one - Thanks
Oh my word …. My mouth is watering big time !! I bet it would also be great with some mushrooms added !! I am definitely going to try this !! Thank You Tom and Melissa for sharing this !!
Swiss steak is one of our family's favorite dishes!! My Grandparents made it. My Mom made it, and now I carry on the tradition! The children in our family who didn't have the opportunity to know their Great-grandparents or Great, great Grandparents, get to know them thru this dish. I love sharing stories of my Grandparents and my Mom with the younger kids. It allows them a connection with some of the best people in our family. When we need comfort food, I make Swiss steak. We make ours a little different. We use tomato juice as the broth and gravy. My son used to call his plate "Swiss steak with volcano potatoes." LOL. We also serve with corn and a salad with oil and vinegar dressing. Thank you for the video and walk down memory lane. I needed it today.
That looks so delicious. I always use round steaks to make a dish we call 8 hour steak. You simply take 2 round steaks, place them in a 9"x 13" pan. Pour 2 cans of cream of mushroom soup and 1 pkg. of Lipton onion soup mix on them. Cover with foil and place in a 200 degree F. oven for 6 to 8 hours. The soup makes a delicious gravy and I also serve it with mashed and corn. Too funny!
We call that No Peek Stew.
I cook round steaks in my casserole crock-pot like that. I do sear the steaks first, but no flour. Just a quick sear on each side then into the crockpot (it's the shallow 9" x 13" rectangular one). Add the soups, cover and cook on low all day long. It's just Crock-Pot Steak in Mushroom Gravy at our house.
I made this today. I really enjoy your easy to make and tasty recipes. Your Chicken Pot Pie Casserole is also delicious. I appreciate your work. Please keep it up.
I startedaking this 45 years ago when Corelle was popular. It's those dishes that make it so tender. I still use them. They will make any meat cut with a fork.
Steak and gravey was my favorite meal as a kid. And still is my favorite as an adult. Mom always browned off the Steak in an iron skillet. Then made gravey from the dripings. Add the Steak back and simmered on low for several hours. It cut like soft butter. The only thing I do different now. Is I use a slow cooker to simmer it in. I even still pour the gravey over a slice of bread.
Just talking about this is making me hungry! We really appreciate that you are watching our channel.
Oh my gosh. I did the very same thing - the gravy over a piece of bread for "dessert" . Such good comfort food memories!
I have the same recipe with the exception of using tenderized round steak. Yummy!
Excellent take on a Midwest classic. Mom got this in the oven before Sunday School and was ready when we got home from church. She added sliced tomatoes in the summer when they were fresh, and a sprig of rosemary and a couple bay leaves. Such a great Sunday lunch!!
Your channel is my go to recipe ideas and I have never been disappointed! Thank you!
I don't know why I've never made Swiss Steak. I made yours, and it's out of this world. Thank you both!
Tom, you and Melissa always seem to have recipes that just about everyone loves.😊
And we have most ingredients already
Can’t wait to try this! If we have left over Swiss steak, I add sour cream to make it into a beef stroganoff. So good! Thank you for this recipe!
I love that you use your moms dish every time you make this 😊
Well. , you have done it again. A big time Home Run.!!!! Thank you so much again for sharing this family favorite recipe. 💙💚💛🧡❤
Another great recipe. Thank you Tom and Melissa❤
When I make that dish, I use cube steak, but I'm going to try this next time I make it. I love all your dishes.keep it up. We all love you..
Hi Tom…. I could not wait to tell you that I made this Swiss Steak tonight and it was so delicious. I had not even thought about Swiss Steak since I was a kid. I have never made it before myself but I can tell you that I will be making it again. I love watching you and your wife and I have made a lot of your recipes. Keep the oldie but goodies coming. Thank you.
This looks soooo good! It's a fancier version of a recipe my family makes with round steak. I wondered if you guys had that steak trimmed/specially cut? Those were some good looking pieces of meat! Thanks for sharing this yummy looking dinner. Take care! 💖
My mom always made Swiss steak but it was different a bit. But, it was just as tender and delicious! Dredge and fry it up the same. But she would cut onion, peppers and carrots and would mix beef broth with pan juices from frying meat as well as a big can of diced Italian tomatoes over the meat and cover and bake. The flour from steak would thicken everything perfectly and would have it with rice or mashed potatoes. Now I need to make some Swiss steak! Yummy either way to me!
I have never had Swiss steak that didn't have tomatoes in it. My mother, grandmother, and I have always used the same recipe as your mother and it is wonderful.
It is....I'm sure this other version is good too. Just different.
Just made this steak recipe for our Sunday home group. Everyone really enjoyed this dish! Thank you! My mother would put ketchup, then onion and bell pepper slices and slow cook the steak. She did not make a gravy. This is a nice addition to my recipe box! We really enjoy your program!
Love Swiss steak! Louisville, Ky here. We had this often growing up but Mom always included stewed tomatoes in ours. I make it myself sometimes, but I like to eat over white rice. Growing up we usually had mashed potatoes with it and probably green beans from Daddy's garden.
Mom cooked hers in an electric skillet on low for a couple hours. She loved her electric skillet and used it often.
We have an electric skillet, but we've never made this recipe in it. Sounds like a great option. Thank you very much for watching our channel. It's nice having you at the table with us.
Mom always made hers in an electric skillet and used a tomato sauce for gravy!! Frankfort here!!

Hi, Tom & Melissa!
Today, I made your So Tender Swiss Steak! It was so delicious! And it was fork tender. My husband loved it! Thanks for sharing the recipe!
My parents use to make swiss steak. But they used tomato sauce into the gravy. It was delicious! I'm going to try your version of it. It looks very good.
I just made this yesterday. I did add bell peppers with the onion layers, and I cooked it in the crock pot as we were going to be gone most of the day, so cooked it on low all day. OH MY GOODNESS!!! This was so good. Definitely will be making this again ⭐️⭐️⭐️⭐️❤❤
Thank you so much for this recipe! Finally a swiss steak without glorified hamburger meat called steak!
I love this! My mom made it using cubed steak, so that’s what I’ve used. Now I know how to use the round steak! Meat and gravy is my most favorite food ever!!!
Thanks for the recipe….😀
❤-Brenda
You are very welcome, Brenda. This is such a nice meal. We appreciate that you are watching our channel.
Made this for my roommates and I for Sunday dinner....I made buttered noodles to put it over and it was amazing! Thank you! Love your channel!❤
I’ve never had Swiss Steak before, so I can’t wait to try this.
It's a nice meal. We appreciate that you are with us at the table.
I have never had this dish. Looks like something to try for the grandkids with mashed potatoes. Thanks for sharing.
My goodness, i haven't thought of swiss steak in 40 years! Our mom used to make it back in the 70's. It was so good! I'm gonna try this; and thanks for telling us it freezes well. I cook for 1 so it helps to know that freezing will Not ruin it texture wise.
I make liver and onions the same way! That's how my grandmother would make it and it was De-Lic-ious!
We are so glad you are going to try it again! We hope you enjoy it like you did all those years ago. Thank you so much for watching our channel! Have a great day!
Haven't had Swiss steak and gravy in years! This looks absolutely delicious!
YUM!! Definitely going to try this too!! ❤❤
Thank you for this great recipe! I have been looking for Swiss steak without tomatoes. This fits the bill! Yummy 😋
I have looked for years for a tomato gravy that you would put on your meat loaf after plating it. No lumps of tomatoes in it. Thank you!!
My mom taught me to make gravy rue in a jar. Thanks for the memories ❤
Love this too! My mom would sometimes add canned sliced tomatoes 1/2 way through baking, or sometimes mushrooms; always with mashed potatoes and she would rotate the vegetables, sometimes green beans, sometimes corn and I loved the peas; thanks for posting rhis
Hey from South Carolina, that swiss steak looks amazing! I'm goin to try this one!❤
I absolutely loved this!❤
Yummy different way to cook steak😊
I haven't made Swiss steak in decades. You've inspired me to make it again. Thank you :)
This looks amazing!!! Definitely gonna try it! Thank you!!
Swiss steak to me is gravy with tomato sauce and green peppers and onions. I use a baking bag and do it all in the oven. Floured and seasoned tenderized steak covered in flour then tomato sauce and a little water. Bake it for 1 he 20 min and it’s fork tender and no frying. The gravy is already made. I’ll have to try this though it looks delicious!
Green beans and mashed potatoes would be great, applesauce, cold on the side.😊
I love Swiss steak but have never had it the way you make it. I will try your recipe which looks so much easier than my old recipe. I have the same casserole dish. I inherited it from my granny and I think of her whenever I use it.
Oh, I want to make this. I recently tried another Swiss steak recipe I got from another channel, and my husband hated it. This sounds good!
I can't wait to try this!!!! Thanks for sharing!!!!
