My mother always taught me when I was a child not to be a copycat but I'm now 72 yrs old and I have to say that it pays sometimes to be a copycat bc I'm sure going to copycat you with these eye appealing dishes!!!!🤗 LoL. Love to watch you cook Catherine. Greetings from Michigan. ❤
The enchirito was a big hit at our house tonight! My 7 year old granddaughter practically licked the plate clean…no olives but lots of sour cream for her! Thanks Catherine!
My favorite meal at cracker barrel is grilled catfish with pinto beans and fried okra. When the bread basket comes out, I save one cornbread muffin to crumble on myvpinto beans. Between the grilled catfish abd beans and cornbread, it is a hearty meal.
With restaurant prices and delivery prices so high it’s great to find these copycat recipes that everyone can enjoy without breaking the bank! Everything looks so delicious and doable!👍😋
🌺 Aloha Catherine, Yes, I’m so excited for all these recipes. 🙌🏽 Thank you so much for sharing this vlog! 😋 I really want to try the Hawaiian sliders, “Big Mac.” 🤙🏽 Especially for my grandchildren, they would love this, the only problem is these Little Big Mac 🍔 🍔 baby sliders are called Snacks! 😂😂 🥰 Thumbs up! 👍🏽

My husband and I love working in the kitchen together. Your video just popped up, and I had to subscribe-- yummy stuff going on here. Every couple of years, we probably pass by your exit-- we go and see our children and grandchildren in McAllen. I'll wave as I pass on the next trip. 😊 Blessings to you.
To bump up the bacon flavor I would fry the onions & chicken in bacon grease. I use bacon grease in place of butter or oil often, you can't beat the flavor! Once when I wanted to squeeze extra water out of thawed hash browns I poked a few small holes in the bottom of the bag and squeezed the extra water out right over the sink. It worked well. I love getting any hash brown recipes where I can't eat pasta, thank you!
I do the same sweet and sour chicken you do basically, with a couple differences. I mix the cornstarch and eggs together, use that to coat the chicken pieces, then fry just until the coating is very lightly browned in coconut oil. (the coconut oil adds sweetness and a coconut-y flavor). As soon as the chicken is very slightly browned, I transfer it to a 9"x13" glass pan, add the veggies, pineapple, hot peppers if we are in a spicy mood, then the sauce over all of it. Then I bake it at 350 for about 15-20 minutes until the chicken is cooked through (it doesn't take long if the pieces are small). The sauce thickens in the oven with the cornstarch from the chicken coating. Serve over rice with extra sauce. It's so delicious! I also add dried fruits such as cherries, dates, and cranberries just before it goes into the oven. For an alternative to the sweet and sour sauce, I made a plum sauce when we got a lot of plums last year. It's sweet from the plums, with lots of garlic, tangy from the vinegar and sugar, and spicy from cayenne. It really hits the spot, and I don't have to make sweet and sour sauce if I'm not up for it. It's nice to have both on hand though, and either sauce is super delicious!
Loving ALL these copycat recipes! I'm watching this video while having my morning coffee on the patio in San Tan Valley, AZ. Now my stomach is growling!😅
I’m with you man, I loved enchiritos and they were replaced by nothing as good. Thank you both for motivating me to make them myself. Yum! And I really got a kick out of you working with Catherine to make them. Watching her channel comforts me, when I do the recipes, and even when I don’t.
Before I even finish watching this episode, Catherine, I just want to thank you for the fact that your parchment paper fits in your pan!!! I don’t know how many RUclips cooks I watch who just shove that paper in there and it’s crinkled up or it’s hanging out one side and Makes whatever food they’re baking crooked lol, it’s crazy. It makes my brain hurt. I noticed the other day on a video of yours I watched and it was perfect ppp (parchment paper placement) you can use that!! I just made it up lol. Or should it be pppp? Perfect parchment paper placement!! and today when you just put that bacon on there and it was perfect!? I can’t thank you enough. ❤❤❤❤❤
I have to tell you Catherine that was my Favorite thing to get at Costco!!! I got one every time I went!!! I Love all of your recipes!!! Thank you for the reminder!!! God Bless Us All!!!
