  • American Goulash aka Succotash
    1 medium onion diced
    1 pound hamburger
    2 cloves of garlic chopped
    1 bell pepper diced
1 14 oz can tomato sauce
2 14 oz cans of diced tomatoes
    2 cups of beef stock
    ½ tsp seasoned salt
    1 ½ tsp Italian seasoning
    ½ tsp smoked paprika
    1 bay leaf
1 ½ cups dry macaroni noodles
Start to brown the burger in the pan and once it starts to break apart add the garlic, onion and bell pepper, stir well. Then add the rest of the ingredients except the pasta and bring the mixture to a slow boil. Boil 25 minutes and then add the pasta. It takes about 25 minutes boiling to cook the pasta through but remember to stir the pot frequently because the dry pasta will stick to the bottom of the pot.
You can serve this with cheese if desired.

I’ve been making goulash for about 70 years bc that was the first dish I learned to prepare at the age of 18 when I got married. I’m 88 now and still make it in smaller portions just for myself. I still like it very much.

Hi Colleen, I just watched this on my TV with RUclips and loved the recipe. We are seniors too, a bit older then you 75 and 76 and I have always loved to cook. Now somedays it's more like work because of all the things that happen to you once you don't have that young body and energy. This is a good dinner and I'm excited to make it. Not hard on the budget either. Thanks for sharing. Stay well and safe.

I think your meat sauce in the American Goulash would be very versatile. Some of my Grandchildren love spaghetti and others rice or couscous. I would make up a big batch of meat sauce and add the appropriate carbohydrate at serving time. For real comfort food some of my family love mashed potato’s which would also go well. I’m sure Thespis sauce freezes like a dream in appropriate size containers. Thank you for the recipe.

Colleen, I have a few questions. First, I don't have any seasoned salt, will it affect the flavor much if I just use regular salt, and secondly in the video you mentioned you add soy sauce or worcestershire sauce, but either one is not listed in your printed recipe. I assume it should be there correct. I'm making this tomorrow, so I hope you see this. Thank you. Stay well and safe.

    • @oursilvermoments6028

I’m going to try this. I made some last week from a different recipe, but when I tasted it, it was too tart with the tomato paste. I added a little sugar to cut the acid. Unfortunately, that little bit didn’t make a difference so I added a little more. That made it too sweet. Sigh.
