When I was in college back in the 80’s, our cafeteria made a dish called “Vegetarian Deep Dish Pie” that was available every other Wednesday and served as an entree. It was one of my favorite meals and this is as close as I’ve ever seen to what that dish was like - I’ll have to give it a try!

Oh my goodness! Another one my Mom made all the time! This is one of my very favorite casseroles to make at Easter bc the veggies kinda give a Easter Egg look to it. Only difference is I use cream of chicken, some diced onion and top with crushed CheezIts mixed with melted butter. This is a really yummy casserole ya’ll!

I work with autistic children.. we were doing a drill where I asked her, what do we get from chickens, I expected her to say eggs, well she said, fingers! I laughed so hard.. she was a very smart girl!

I've been making my own cream soups from scratch, because although I absolutely love Campbell's they just put too much salt in theirs for my new low sodium requirements. Turns out with a little butter, flour, and heavy cream it is a snap. Was intimidated for years. Don't overthink it, just look at a few videos on here and get in kitchen and make yalls too. ❤

That looks absolutely delicious, MeMe I use veg all at work when I make a cream soup like chicken pot pie for instance, I had never seen the large cut, I don't know if we have them in Minnesota. We just had this tonight. It was awesome! I did add a small can of water chestnuts which I cut up. I just love those. My mom used to make an English Pea Casserole with them and it was great. My husband won't eat peas though. So I added them to this casserole dish. Thank you for this recipe!

Before my grandma passed away last year at 89 my husband and I brought her 22nd great grandchild into the world (our 5th child). Her name is Juliette Rosalie and she has a heart shaped red birthmark in between her eyes. My grandma’s name was Cupid and I call my daughter’s birthmark a Cupid Kiss because what better represents Cupid than a love heart.

My mother passed away in 2021 at 87 years she cooked a lot like MeMe for us 4 girls & our daddy thru the years! I've missed her greatly like you have missed your MeMe! I love watching her videos & listening to her talk. I'm from Eastern North Carolina but your southern draw is much stronger than ours...but I love it! I have family in S.C. Keep showing your precious grandmother's recipes she's still enjoyed by many!❤

I make this same vegetable casserole only difference is I add water chestnuts to my vegetable casserole.

I work as a receptionist at a retirement village. Plethora of careers in my family... educators, marketing professionals, electrical engineers, entrepreneurs/business owners, car salesmen, banking representative, foresters.... we run the gamut!
I tell ya, in the past I didn’t really care for Ritz crackers as much as some others. When I made the cabbage casserole though I decided to make it as is. Oh my goodness the crackers were better than I had remembered and I will be using Ritz now for anything that needs crumbs for a filler or a topping.

I live in north carolina so I agree on it feeling summer time in September it is still really really hot here and it doesn't feel like fall till end of October, but I came across your channel just this morning and have looked at several videos and I love watching you which I love to cook my grandmother taught me how to cook and how to bake but its always fun to watch others just to get new ideas or simply recipes that you may have forgotten, are your cookbooks still for sale. i had never heard of this before but made it tonight and it was a hit! husband loved it and it's a great alternative to mac and cheese, which i can't have any more due to blood sugar issues. this will be be in the regular rotation.
also just wanted to add i couldn't find the canned veg, not even at walmart, so i used some frozen veg (green beans, peas, corn) and fresh ones (carrots, a potato, zucchini, onion, garlic). i boiled the frozen ones first and roasted the fresh ones to soften them up a bit. worked like a charm!

I am going to try both of these..but as far as the Casserole goes..I will probably be using cream of chicken soup because no one around here likes cream of mushroom soup.

i gave up making lasagna a long time ago,too messy i found stuffed shells was alot easier and clean up was no effort@@memesrecipessc
