I just found your channel. I am Mexican American but have very little Mexican heritage. My Grandma passed away when I was really young and so I didn't get to learn much from her. I have faint memories of the foods she cooked. Homemade chorizo and tortillas I remember fondly. Your channel reminds me of the heritage lost and that I can still learn it even with her gone. But, yeah I was curious about where it came from because my husband didn't know and my phone just wouldn't accept "asado." I was happy to come across this today.

I ordered Chile Colorado at most of them but I remember them making it with beef. I now live in Sacramento and can only find Colorado made with pork. I miss the tender beef cubes in Colorado sauce from my younger days. Have you made Colorado this way before? I would love to see you do a Beef Chile Colorado! PLEASE!!! Love the channel!!
