The Black Staining Polypore (Meripilus sumstinei) and bonus edible New England Mushrooms

    Out in the woods behind a cemetery we found this impressive rosette of the #BlackStainingPolypore or #Meripilussumstinei. These are Saprobic (decay) mushrooms that cause white rot (digests lignin, not a brown rot Polypore as I said in the video). They usually grow on oak but have been reported on Doug Fir (according to Michael Kuo).

    This species is easily confused with Chicken of the Woods (Laetiporus) and Hen of the Woods (Grifola) since it is a large fleshy Polypore that also grows near the base of dead and dying trees. It forms large rosettes with broad fluted vases that open up into broad caps. The key difference between the other species is that the flesh stains black when bruised or cut.

    Meripilus is an excellent edible mushroom when young, despite it’s disconcerting discoloration after picking. It’s texture is on par with chicken of the woods, and I think the flavor is even better (mildly woody and acidic with meaty overtones).

    Careful everyone, if your fingers are dry, it will stain them black when cutting them in the kitchen! Can we all agree this tastes better than Chicken of the woods and rename it "Jerky of the Woods" instead of the appetizing name "Black Staining Polypore"? :) Great video!

    Appreciate the part about only taking what you need and harvesting from the edge, because way too many people just destroy everything
