It's so nice to see someone out there sharing their vegan, gluten-free, all-natural sweetener, fat-free creations!! Is there any reason why you didn't want to bake them in a rectangular pan where they could all expand & bake into traditional round puffy rolls that have to be pried away from one another? Couldn't you do that also?
i tried this with cornstarch instead of tapioca flour, since it's pretty expensive were I live, and the dough turned out sooo sticky I couldn't even roll it. I baked them anyways and they turned out too hard so I don't recommend using cornstarch. but the flavour was awesome! I also didn't add any sugar and it was delicious and sweet! but I do think some sugar was missing in the dough (perhaps a tbsp??, idk). I'll definitely try this again but with a tapioca flour!!
Aww I'm sorry the cornstarch didn't work. In small amounts you can sub one for the other, but in this large amount it's just not the same. I wish tapioca flour was easier to find everywhere, it's such an awesome GF flour. I'm not sure where you live, but you could maybe look into ordering it online?? It's usually cheaper that way, even I often order it just to save a few dollars. Yes some sugar in the dough would be good! Since there are dates in the dough I didn't add any, but it's kinda up to personal tastes.
omg I just made these and I already ate three of them😅😅 They're super yummy! My batter turned out very very sticky so I added almost 1/2c extra flour. I made a big mess and there was way too much filling in the rolls but I did it!! Such an awesome texture 😳 I will tag you on ista xxZ

Chia flour--how interesting! I've never heard of or used that, do you make it yourself by grinding up chia seeds? It's definitely worth trying, I can't say how they will turn out since I haven't tried it but thanks for sharing the idea :)
You are welcome to try, but I cannot guarantee the results as I haven't tested it myself. Brown rice flour is not as sticky, so I worry they will be too dry and not hold together😁

You could try using regular potato instead since it still has that starchy stickiness they need and add 1/4 cup of coconut sugar to the dough to make up for the sweetness. That's the only alternative I can think of.
