Looks delicious! Have you ever tried just using beet crystals for the coloring instead of fresh? I personally find it gives it a bolder color.
Yes I agree the powder makes for a beautiful color! But I didn't want to call for a specialty ingredient since most of my viewers won't have that and may not want to spend the money to buy it for just one recipe.

Now that you know the turmeric trick with baking soda, you could do that for red velvet too. At least I was thinking that when I watched the turmeric pancake recipe.

I like the idea a lot! I am not as oil free as you but I adore the idea of beets as a way to make red velvet. You are opening a new compartment of my creative cooking mind. Thanks so much. PS. I just recently started using dates. I am more of a salty tooth so to speak, than a sweet tooth. Once I started working with dates I couldn't believe how much they taste like caramel. I know you are probably thinking, yeah and? Oh well, it's all part of the fun of being vegan. So many amazing new tastes!
The magic of dates never wears off! Speaking of a salty tooth, you could make a ridiculously good salted caramel sauce out of dates...just sayin ;) I adore the sweet + salty thing! Getting the creative juices flowing, that's what I'm here for! Vegan baking is such a fun new world, I love exploring healthier alternatives just because it forces me to step outside the normal baking box!

I finally made this yesterday, but added only half of the recommended baking powder since I hate the taste of baking powder and it's bad for stomach. It turned out very dense lol. Next time I am definitely adding the full recommended baking powder.
Rash N Yep, without eggs more baking powder is necessary to get them fluffy. I promise I’ve made these countless times with the full tbsp of baking powder and never tasted metallic. Hope the next batch is better!

Nicole Ann should work, but you probably don't want to blenderize the mix, just add the flour separately by hand after blending the wet ingredients.
Gosh, I can’t get enough of your channel! If the red velvet part wasn’t necessary for when I make it, do I just put in one cup of a liquid (non-dairy milk or water)?

I just made these and followed the recipe exactly, just added one small beet instead of half and had to bake them for an hour and they still were not fully cooked inside, nor fluffy. The mixture was exactly the same as in the video, just slightly more red, so not really sure what went wrong?!

How is this moist? I'm scared of making dry cupcakes for my class. What should I add in to ensure that it won't be dry at all
With all the dates in there they really are very moist, you don't need to add anything! I've had many readers make them and no one has ever said they were dry. If you are really still worried then make a test batch first!

+LaraTheVegan I've personally only tested them with spelt, all purpose and oat. I have had reader who have had success with GF and buckwheat, but I haven't tried it myself.

Haven't tested it, but it could work! They may be slightly gummier

Yes! Although they will make the cupcakes taste a bit...fruitier😊

Yes they are! My favorite brand is Enjoy Life (if you are in the US), that's what I used here. But many dark or semi sweet chocolate chips are actually vegan, just check the ingredients.

Yes, that will work here too!

Hi Natalie, would it be possible to make these int one large cake rather cupcakes? Also, would using just store bought gluten free flour work?
GF flour does not work very well here, the texture comes out really mushy. Oat flour or wheat flour is best. And yes you can bake it as a cake, the batter will fill up a 6 inch round cake pan perfectly, but it will need to bake for probably 5-10 minutes longer.
