    The most important part of any sushi chef's arsenal are the knives. Not only is a sharp knife able to do everything you need it to do, a sharp knife is a safe knife. But most importantly, sushi chefs need a very sharp knife to create edible art from fish and vegetables. Of course skills is also important which comes with time and practice but it all comes back to having the sharpest knife possible. Can your knife do what I did in this video? I would love to see any close results!
    I have been using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. This can also be used for breaking down whole fish and chicken. But normally for slicing, sashimi, vegetables, meat etc.. This is my custom specked knife which I have been using for more than 8 years.

    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989.       Yeah, bur Hiro keeps his basic knives extremely sharp. That said, l think even with a mediocre knife edge, he could probably show most of us up in cutting skills.

    Now that is the kind of knife I have wanted. My Japanese-style (Dalstrong Shogun series) 8-in chef's knife isn't horrible by any stretch, but there's always a feeling that something's missing.

      I have 8 knives and a cleaver from that set. Love them. They can be brought back to super razor sharp with a 3k and 6k stones.

    I use some of the same knives as you, HIro. I have the Masahiro Gyuto and the Kikuichi Sujhiki, both for daily use. I also use Blue Steel Yanagis and Debas in addition to other Japanese steel blades. I regularly sharpen all with whetstones and, while I am not nearly as fast as Hiro, I can slice a ripe tomato or green onions less than 1mm thick. I slice usuzukuri so thin that the plate shows through. I may be a home cook, but my sashimi plates are restaurant quality.

    Hey Hiro I just thought about it: Why dont you guys post some shorts? Some channels that get video views from 10k-200k will have shorts with like 4M+ views! It would work for you maybe if u did some shorts where u do crazy knifework!

    All my knives can! Even the cheapest knife in my collection which was $25 can do that (though, I do have to sharpen that knife on a whetstone often).

    What I wanna know is where can you buy knives like this? Can anyone link a knife set that's as sharp as these? I've been wanting to give my mom some as a gift but just see single knives or shady looking bundles that don't look like they'll come that sharp or have some gimmick

    Your skills were over for me at that moment. Where you push the vegetables over the board with the cutting edge? By the way, you turn the knife when you push it. This sharpness is normal for me at home. It's nothing special, I can do it with any European knife?

    This is so stupid. Tomatoes ripeness varies hugely and a blade that was sharpened on really high grits can sometimes struggle more on a tomato that a duller knife.
