Just tried this recipe, it turned out very tasty. I tried the 8 minute on high power in my instant pot, with a slow release. My chicken only got to 135 degrees with that. I tried 4 more minutes, with a quick release, and it only came up to 150 degrees. So I went back in for 4 more minutes with a slow release and over shot it to 180 degrees. It still turned out very tasty and tender, perhaps just slightly too done. I think next time I will try about 12 minutes with a slow release on fresh unfrozen chicken breast. Thank you for the recipe.

I tried frozen once for 7 mins with a 5 min slow release. I cooked 4 of them with a cup of water only. I always check the internal temp and they were cooked at that 7 min time.

If you have a kitchen aid (is what I use) or a good sturdy hand mixer you can put the chicken breast in a deep big bowl and turn the mixer on high and it will shred the chicken quickly and perfectly. My son-in-law is a manager in at a Mexican Restaurant and they have huge mixers & that is how they shred their chicken.
Thinking about getting a Kitchen aid for this purpose, but need to look into other things I can do with it to make it worth it... lol
You forgot to say natural release after cooking so it doesn’t seize up and get tough😊

People please, cut your chicken breast up and season it at least over night to not only absorb flavor but also make the meat more tender so it doesn't taste like card board
