An alternative would be to finish the chops with butter, remove excess fat then proceed as per the recipe for sauce. Instead of butter, add some heavy cream and omit the flour.
I used this technique to make a pork gravy last nite for some leftover apple stuffed pork tenderloin.. I didn't have any pork chops to cook.. so thought.. "Bacon is pork!" LOL SO i fried up about 8 slices low and slow so the bacon would Brown but not BURN and POOF bacon Fond! drained off most of the grease of course..and continued with your recipe. Family says it was a winner.. thanks.

My local grocery store tends to have a brand called Barefoot from California on sale all the time - so that is usually what I buy for these recipes. I used a chardonnay for this recipe.
