I was a saucier for years. I would have never tried pickles/gherkins in a sauce! I cant wait to make this, whether I like it or not will not matter. I'm curious how these flavors mesh with the texture of a pickle and a meat. Very exciting!

What type of Gherkins do you suggest for this recipe please? I live in the Shenandoah Valley, and they have a massive variety of Gherkins at our markets here (sweet, dill, garlic, etc..). Do you suggest a savory or a more sweet... or something like a French Cornichon? Thanks for any help, and I love this channel.
I'm an addicted sauceaholic. Not to be overly critical, but you must have cromagnum sized fingers. Your idea of a 'pinch' looks closer to 1/4 teaspoon or so to me. Keep up the good work!
".....if there were any grease or oil, you would wanna de-grease....." What is your aversion to the natural fat of the protein you are preparing???????? Five seconds after the above statement, you non-nonchalantly drop in a tablespoon of butter.
Wonderful point Al. The great thing about making a homemade sauce is that you can make it to taste. If you like the taste of a sauce when using the fat from the protein- then use it. If you like the taste of the sauce using the degreasing technique - then go for it. There is no right or wrong way - only the tasty way😊

Thanks for watching 👍 Dill is typically used. However, if you wanted to experiment with other savory flavors i am sure they would work.

I would suggest either a beef, chicken or vegetable stock or possibly water. Let me know how it turns out👍
