Make your own Tomato Confit, like sundried tomatoes

  • These little beauties will be the tastiest tomatoes you have tasted!
    The word confit is the process of cooking food at low temperature for a long time. The process concentrates the existing flavours and seems to develop new ones, resulting in a umami sweetness.
    These confit tomatoes are easy to make, and then the culinary uses are limitless. From simple pastas, salads, risotto, bruschetta, chicken dishes, grilled fish to virtually anything you would use tomatoes for. It’s a different version of sundried tomatoes but without the sun of course. I used ripe but still firm Romano tomatoes, but you can do this with any tomato.
    The recipe itself is an amazingly simple process, it’s made by slow baking tomatoes with olive oil, herbs and garlic, plus a little seasoning. You can semi dry them or go all the way, depends on your preference and uses. I prefer to remove the skins, but the seeds and pulp must be removed. Once cooked, transfer to a jar and top with olive oil. Keep in the fridge they will last several weeks or even longer if well covered in oil.
    If the olive oil sets hard in the fridge, (as any good olive oil should) simply remove from fridge 30 minutes before use. So, make some tomato confit today.

    When I see recipes like these I get a deeper appreciation for the abundance of these vegetables that I am blessed to have so liberally at my disposal. I say that because there are so many uses that we don't know of. This is a great example. I would probably buy this in a grocery store, but now I see I can make it and jar it myself...really cool..thanks Joel..come toujours merci bien!!!

    I make this every summer with my garden tomatoes.
    It's a lot of work just to get one jar. But it's worth it.
    To describe taste...think of candy..
    You will be addicted.
    I use them on pizza, as a jam with a good hard crust bread or straight out of jar.
    Try it.

    Loads of thanks Joel. In Sri Lanka we don't have this available and I was looking for a similar recipe. I didn't like most of the recipes available cause they all say you put it outside to dry. You have been here so you know how dusty our country is. Appreciated very much this recipe.

    Amazing. Never seen this before. Question: Do they need to be kept in the refrigerator? I ask because we know that if you keep garlic in oil one can get very sick... or does the roasting of the garlic make it safe to keep in, oil in a cellar? Thank you for the inspiration Chef.

      Yes Greg, it's best to refrigerate them, although the garlic is dried and roasted and should be fine even out of the fridge.

    Tomato confit, if completely submerged in oil will last three to four weeks in the refrigerator and longer if placed in the freezer.

    Did you clean thé jar on à steamer to take off bactéries... This helps to keep thé tomates for longueur... I think... As i do it for jam... Ehm delicious i like it... I will do it when this type of tomato comes in market généraly in summer.

    In Pakistan it was very difficult to find affordable sundried tomatoes for home cooking for a long while and I looked everywhere on the internet for a substitute (I didn't want to risk drying the tomatoes on my own, I felt the birds would eat them or something haha). But I found no substitute. Till now...but now you can find affordable jars of sundried tomatoes in the supermarket now hahaha

    I might asking stupid but when you have put them on the glass/cann do you then set them aside in a dark cold room as some italian ppl do when they make tomato sauce or just in the refrigerator, and for how long time does it hold,
