- French Chicken Tarragon or Poulet à l'estragon is a braised chicken in a juicy creamy tarragon sauce. Tarragon is such an underused aromatic herb, yet it marries so well with chicken. Poulet a l'estragon or chicken tarragon is a common French dish you find in many fine restaurants. Now you can make this restaurant worthy dish at home. It's packed with amazing flavours and this technique of cooking the chicken gives you amazing juicy results. I find that the smaller chickens always give you better flavour. If you can't find fresh tarragon, no problem simply use the dried version. The results will still be amazing. The cognac or brandy is optional, but of course it’s for cooking and not drinking. Although you should taste it first to be sure!

I usually make the tarragon cream sauce (with the bundle of stems tied up in butcher string; there's flavor there! And I love as much of that as I can get) separately while the chicken is cooking, that way it's ready to go with no waiting.

Fabulous, fabuloous! Your version is THE absolute best. I finally have here in Spain a small tarragon plant I managed to aquire, but still not enough to really harvest. I had been waiting for it especially for this recipe. So, I infused your suggestion of dried with the red wine vinegar a while, then strained it and could manage a good tablespoon of fresh chopped tarragon that i could add later with the cream etc. Nothing but raves! It's July here and hot, so I just served it with a lovely, crusty Spanish bread loaf. Dessert was two sorbets: orange campari and lemoncello sorbets. (Aperitif just a great rosé and olives.) Thank YOU again for another great one!

You’re definitely on fire 🔥 today Chef Joel! I love Poulet à l’estrgon! I make this dish 2 to 3 times a year my entire family loves it! I only flambé once, l tilted my pan too much and got startled dropping the pan, half of my dish was on the stove top!
