Beautiful recipe! Being Greek, I approve! May I suggest you start with the potatoes on the bottom layer instead of the eggplant? It holds a lot better that way.

As a Greek I endorse this recipe, Joel🏆 Some Moussaka versions leave out the potatoes for even more eggplants. There is also a Zucchini Moussaka variation but is less popular. Instead of a bechamel sauce one can use a Greek joghurt sauce with eggs, cheese etc. It's very light and originates in the Greek island of Thasos. Me and my family are very sad that Whiskey is gone😭💔

½ TL Muskatnusspulver
½ - 1 TL Salz
½ - 1 TL Pfeffer
100 g Kefalotýri-, oder Graviéra-Käse (erstatzweise Parmesan)
2 Eier

Α loved comfort food at the right time.. welcome back chef.
In my greek family we dont boil the potatoes, we just frie them and we use them at the bottom, before the aubergines. It somehow makes the mousaka tower more steady and they keep some crunchiness.
We also use cephalograviera or kefalotyri instead of parmesan.

This is the PERFECT, Greek-est ever Mousssakas! ❤❤❤My mom created EXACTLY in this way her moussaka, with the exact ingredients , even in the bessamel sauce-- cinamon, nutmeg , parmezan!!❣️❣️Now. In my own version , I cook it ALMOST like this, but I use only eggplants in 3 layers, precooked in the oven . Not at all potatoes. I find it tastes great, too, and it feels lighter. Again, congratulations! ❤❤

My parents also lost a collie (the smooth one) due to cancer just a couple months ago, also almost 12 years old. They tried to live without a dog for 2 months but that void was unbearable and last week they pulled a trigger and bought a puppy, I don’t remember my mother being so excited in years! The life goes on.
