Classic Greek Moussaka - Traditional and Delicious!

- The word "Moussaka" itself has Arabic origins, derived from the word "musaqqa'a," which means "chilled." Early versions of this dish were made with layered vegetables and sometimes meat, then baked and served at room temperature. The concept of layering and baking vegetables eventually spread to other parts of the Mediterranean, including Greece.
Greek Moussaka, as we know it today, is said to have been adapted and popularized by the Greek population during the Ottoman era. This widely known Greek version was created by the French-trained Greek chef Nikolaos Tselementes in the 1920s.

Traditional Greek Moussaka
Ingredients:
• 3 large eggplants, thinly sliced
• 3 medium potatoes, peeled and sliced
• 1 zucchini, thinly sliced (optional)
• 500 ml olive oil for frying
Ground beef:
• 500 g ground beef or lamb, medium fat
• 500 g grated tomatoes or tomato puree
• 1 onion, chopped
• 1 clove of garlic, minced
• 2 tbsp, tomato paste
• 1/2 tsp ground cinnamon
• 1 tsp ground allspice
• 1 tsp black pepper
• 2 tsp thyme (dried or fresh chopped)
• 1 bay leaf
• 1.5 tsp salt
• 1 tbsp olive oil
• 1 cup chopped parsley (optional)
• 1/2 cup beef stock or water (optional, depending on the juice of tomatoes)
Mornay (Greek Bechamel with egg yolks):
• 100 g olive oil
• 100 g flour
• 1 liter full fat warm milk
• 1 tsp black pepper
• 1 tsp grated nutmeg
• 2 egg yolks
• 150 g graviera or kefalograviera cheese, grated (alt: gruyere, myzithra, parmesan or pecorino)
• 1 tsp salt

Finally, a traditional video where the veggies are fried, I tried the baking method & had watery moussaka.
As a Greek I am happy that you made a video of one of our national dishes👌 Purists prepare Moussaká with aubergines only. We typically add dry white wine to the tomato sauce also and use butter rather than oil in the bechamel sauce. The Ottoman cuisine had an enormous influence on my country's cuisine by enriching it with spices such as cinnamon, cumin, chili, bay leaves and nutmeg. Great video🏆

I make mine with butter not olive oil and oven cook the eggplant but will try the deep fry which saves time otherwise ingredients much the same. Thank you such a delicious meal.

I've had several versions of this dish and found it most agreeable every time. Great mix of the yoghurt mellowness and more zesty flavours of the spiced filling.
I ate this all the time in Greece when I was stationed there in the Navy, so creamy on top!

I decided to cook this today. I will be using this recipe from now on (the only ingredient I don't use is potatoes - we don't eat them). Also, I didn't fry the eggplant, I cooked the slices in the oven. I found the balance of flavours excellent. Thanks again!

Awesome execution! Indeed in the greek version of bechamel sauce olive oil is used that is in abundance in a land ragged and full of olive groves and few planes for cows to graze and produce milk. Butter is too expensive.

Sadly olive oil has become so expensive in Germany. The 500 ml for deep frying would be around 7 Euros alone. That makes this recipe way too expensive to even consider. :(
Very nice - however, don’t know about the olive oil based béchamel/mornay, and tho I would not be opposed to trying it in lieu of butter. I do however prefer a lamb mince or 50/50 beef and lamb.

@@HungryManKitchen ellerine sağlık abi çok güzel gözüküyor. Geçen ben de yaptım yunan versiyonunu çok lezzetliydi ama bizim versiyon cacık ve pilavla daha bir ferah oluyor yaz için. Yunanlarınki sanki serin yaz geceleri daha uygun olur.
It is better if you keep the bechamelsauce apart, and with parmezan cheese on top mixed with cheese it’s better ( parmezan on top it would burn
