    If you buy a small inexpensive food dehydrator you can use the whole tomato, put it in glass jars and they will keep for a couple of years with no waste. No power needed and you can use the dehydrator inside or outside. That way it doesn't heat up your kitchen in the summer

    That's how I preserve mine too. I use my dehydrator to dehydrate but the oven is just as efficient. Nice work!

    Ooo la la! We love dried tomatoes. We like to dry ours in our dehydrator and then grind them up (almost to powder) in our vitamix.
    Saves a lot of space and is great in so many recipes - we especially love it on popcorn and hummus!

    So, how would you make it where it can last a lot longer than a month? And how can I do it without having to put them in the fridge? I don't have a whole lot of room in my fridge.

    I love the angle for this video! It's so great to learn this method. If I wb these so that they are shelf stable, should I just process the same amount of time that I would do for tomato sauce?

    Isn’t there an increased risk of botulism when storing low acidic foods in oil? I’m not sure what temp inhibits the bacteria, but I remember reading that refrigeration is not cold enough to prevent the bacteria from growing.

      @@aryelrigano903no, tomatoes are not. Most varieties nowadays are over 4.6 (the borderline pH range).

      I believe some tomatoes are on the border of being considered acidic, and that it is recommended to add lemon juice to ensure a low enough pH to inhibit botulism. If garlic or herbs are added to the oil it needs to be frozen to prevent botulism. If refrigerated any oil containing garlic/herbs should be thrown out if not used within 4 days. Botulism is rare, but it’s so devastating when it occurs. I’ve included the link to the CDC for anyone looking for more info.

    I'm curious. You said to store them in refrigerator, but at the end of the video, you were placing them on a self. So is it OK to store on an open shelf at room temperature?

    250f is 120c. You had me worried there, 250c will burn pretty fast lol

    Do these stay hood as long as your lightly oil roasted oil packed tomatoes? I have some in the fridge currently that seem to be hood they are about a month old and I keep scooping a bit out when needed..guess I’m not sure how long I can keep using them..

      Sun drieds will stay good for longer since there is lower water content in the tomatoes.

      You know what, I’m actually going to retract that statement. Logically, they should stay good longer, but I couldn’t say for sure. I feel iffy about her other oil packed tomato recipe. If you’re worried, I would just do one of the other options she mentioned, like vacuum packing or keeping the dehydrated tomatoes in the freezer, as they’ll take up less space than fresh.
